Heat oven to 425°F.
Core and slice pepper and onion into medium slices ( about 3/4")
Place the bell peppers and onion on a rimmed baking sheet.
Drizzle with olive oil and sprinkle with salt and pepper, toss to coat.
put the sausages in between the veggies and roast for 30 minutes.
set a timer for 30 minutes
while that is cooking, start making the honey mustard sauce
After the 30 minutes is up, remove the sausage and veggies from the oven Carefully using oven mits. and toss with the sauce or drizzle on top once in the hoagie roll.

Serve sausage and veggies on toasted hoagie rolls smothered in the sauce.
