Roll out puff pastry, and line one ramekin with two triangles, like a pie crust
Gently press the dough into the bottom and stretch up the sides, poke holes in the bottom of the dough, careful to not go through the dough
In a small bowl, whisk together eggs, milk and salt and pepper
Prepare any additional ingredients, steam and chop broccoli, dice peppers, and dice ham
Place at the bottom, on top of pressed puff pastry
Pour the mixture over the additional ingredients
Sprinkle grated cheese on top
Cook for 20-25 minutes, or until knife comes out clean
Let stand for 10 minutes
Pro tip if you want to remove from ramekin: Easiest way to remove puff pastry once cooled is to run a butter knife around the edge to loosen it up (or eat from ramekin!)
