Crack eggs and empty them into a bowl. (Be sure no shell gets inside the bowl)
Add milk, salt and pepper to the bowl.
Beat the egg mixture until smooth.
Heay butter in large nonstick skillet over medium heat (3 or 4 setting) until hot.
Pour in egg mixture.
As eggs begin to set (stop being liquidy), GENTLY fold the eggs across the pan with a spatula, forming large soft curds.
If you like to add cheese, add it at this time
Once the eggs look fluffy and there's no running liquid, take them out the pan and put on a plate.
