Easy Pumpkin Dip

Easy Pumpkin Dip

This is a great recipe for fall. Serve with sliced apples.

Ingredients

  • 15 ounces Pumpkin Filling can
  • 3/4 cup low-fat cream cheese
  • 2 teaspoons maple syrup
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup canned pumpkin

Instructions

  • Beat cream cheese, brown sugar, and canned pumpkin together with an electric mixer on medium speed in a bowl until light and creamy, 3 to 5 minutes.
  • Add maple syrup and cinnamon and beat until smooth, 1 to 2 minutes.
  • Cover with plastic wrap and refrigerate for 30 minutes.

Spinach Artichoke Dip

  • Cutting board
  • Measuring cup
  • Baking dish
  • Mixing Spoon

Ingredients

  • 1 14 ounce can of artichoke hearts drained and chopped
  • 1/2 package of frozen chopped spinach thawed
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup cream cheese
  • 1/4 cup romano cheese grated
  • 1 clove garlic minced

Instructions

  • Preheat toaster oven or ovem to 375 degrees

Artichokes

  • Over the sink, pour artichoke hearts into strainer and shake until the juice stops dripping
  • Get knife and cutting board and chop Artichoke hearts into bite size pieces
  • Place in large bowl

Spinach

  • Put half of bag of spinach into large bowl with artichoke hearts

Sour cream

  • Using measuring cup, measure 1/2 cup of sour cream
  • Add to large bowl

Mayonnaise

  • Using measuring cup, measure 1/4 cup of mayonnaise
  • Add to large bowl

Cream cheese

  • Using lines on package, measure 1/4 cup
  • Using knife, cut cream cheese
  • Unwrap cream cheese from wrapper
  • Add to large bowl

Romano Cheese

  • Using measuring cup, measure 1/4 cup of romano cheese
  • Add to large bowl

Garlic

  • Pull 1 clove of garlic off the large bulb
  • Peel the skin off of the garlic
  • Using knife, mince garlic into very small pieces
  • Add minced garlic to large bowl
  • Mix all ingredients together with spoon
  • Put mixture into a baking dish
  • Cover dish with tin foil
  • Place dish in toaster oven
  • Set timer for 20 min
  • Using oven mits, take baking dish out of oven
  • Serve with crackers

Black Bean Avocado Salsa

Black Bean Avocado Salsa

Black beans, avocado, and roma tomatoes make the base of this salsa with a healthy dose of lime juice.

Ingredients

  • 1 15 ounce can black beans (such as Bush's), rinsed and drained
  • 1 11 ounce can whole kernel sweet corn drained
  • 4 tomato, roma plum tomatoes, seeded and chopped
  • 1 bell pepper, small red diced
  • 1 jalapeno pepper seeded and minced
  • 1/3 cup cilantro, fresh chopped
  • 1/4 cup onion, red diced
  • 1/4 cup lime juice, fresh
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, ground
  • 2 avocados diced

Instructions

  • Mix black beans, corn, tomatoes, red bell pepper, jalapeno pepper, cilantro, red onion, lime juice, vinegar, salt, and black pepper in a bowl;
  • Fold avocado into the mixture and stir using mixing spoon
  • Cover bowl with lid or plastic wrap
  • Chill at least 2 hours

Notes

Chill and enjoy with chips, as a side or small salad, or any number of refreshing ways.

Jeff’s Sweet Salsa

Jeff’s Sweet Salsa

  • Medium Saucepan
  • Knife
  • Spoon for sturring

Ingredients

  • 2 packages crushed tomatoes, 28 oz 28 oz
  • 1 onion, sweet chopped
  • 1 Cup jalapeno peppers chopped, or 1 Tablespoon powdered peppers
  • 3/4 Cup sugar, white
  • 1 tbsp garlic, diced
  • 1/2 teaspoon oregano
  • 1 Tablespoon cilantro
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon basil
  • 1 teaspoon salt
  • 1/2 teaspoon Cajun seasoning
  • 1 Tablespoon lime juice

Instructions

  • Open the cans of tomatoes
  • Pour the tomatoes into large saucepan
  • Chop the onion into fine pieces and put in saucepan
  • Chop peppers (if using fresh peppers) and add to saucepan
  • Put the saucepan on low heat on the burner. Stir occasionally.
  • Add spices as listed above. Stir.
  • Add sugar. Stir
  • Add lime juice. Stir
  • Bring the mixture to a low boil, then turn off heat.
  • Pour salsa into serving size bowls to cool. Serve chilled with chips.

Cinnamon Chips

  • Aluminum Foil

Ingredients

  • 4 Tortilla flour
  • 2 tbsp Sugar white
  • 1 tbsp Sugar brown
  • 1 tsp Cinnamon ground

Instructions

  • Preheat oven to 350 degrees F
  • Coat one side of each flour tortilla with cooking spray
  • Cut into wedges and arrange in single layer on a sheet of aluminum foil
  • Sprinkle wedges with desired amount of brown sugar, cinnamon, sugar
  • Spray again with cooking spray
  • Bake in the preheated oven for 8 to 10 minutes.
