Boxed Mac N Cheese + Veggies

Ingredients

  • 1 box (7-1/4oz) macaroni & cheese
  • 6 cups Water
  • 1/4 cup Butter
  • 1/4 cup Milk
  • 1/2 cup Assorted Vegetables/Beans

Instructions

  • Bring water to boil in medium saucepan.
  • While waiting for water to boil, choose 1 type vegetable/bean that will be added to the macaroni and prepare 1/2 cup of vegetable accordingly (ex: cut, blend, mash, steam, etc).
  • Add Macaroni and cook 7 to 8 min (or until tender) stirring occasionally.
  • Drain the water from the macaroni (Do not rinse).
  • Return macaroni to pan.
  • Add 1/4 cup butter to macaroni.
  • Add 1/4 cup milk to macaroni
  • Add cheese packet to macaroni.
  • Stir ingredients together.
  • Add the 1/2 cup of the vegetable or bean of your choice to the macaroni.
  • Serve!

Notes

Ideas for possible vegetables/beans to add to your Macaroni & Cheese:
  • Cauliflower
    • (florets, mashed, riced – steamed, raw)
  • Broccoli
    • (florets, riced – steamed, raw )
  • Sweet Potato
    • (mashed, cubed – steamed)
  • White Beans (Canenlini Beans)
    • (whole or mashed)
  • Carrots
    • (shredded, cubed, sliced – steamed, raw)
  • Peas
    • (frozen, canned)
  • Carrots
    • (shredded, diced, sliced – steamed, raw)
  • Kale
    • (shredded – raw, steamed)
  • Peppers, Onions, Green Onions….
    • (sliced, diced – sautéed, raw)

Easy Homemade Quesadilla

Ingredients

  • Large flour tortillas
  • 1/2 cup Cheddar cheese
  • Taco seasoning
  • Cooked chicken (optional)
  • Green pepper (optional)
  • Onion (optional)
  • Tomatoes (optional)

Instructions

  • Grab a cutting board and knife
  • Wash all vegetables
  • Chop green pepper into bite sized pieces
  • Cut tomatoes into bite sized pieces
  • If adding chicken, cook in a skillet.
  • take chicken out of skillet and put on plate.
  • spray skillet with cooking spray.
  • Grab a soft flour tortilla and place in skillet.
  • Add all ingredients to the middle of the tortilla
  • Once cheese is melted, fold the tortilla in half with a spatula.
  • flip tortilla.
  • Remove tortilla from skillet and slice in half
  • Add sour cream or salsa to taste

Ingredients

  • 2 cups Original Bisquick™ mix
  • 2/3 cup Milk
  • 1/3 cup Sugar
  • 2 tbsp Vegetable oil
  • 1 egg
  • 3/4 cup Fresh or frozen blueberries thawed and drained

Instructions

  • Heat oven to 400°F
  • Place paper baking cup in each of 12 regular-size muffin cups(optional), or grease bottoms only of muffin cups.
  • Stir all ingredients except blueberries just until moistened.
  • Gently stir in blueberries
  • Divide batter evenly among cups.
  • Bake 13 to 18 minutes or until golden brown.

  • 6 Hard Boiled Eggs

Instructions

  • Grab a medium size bowl, cutting board, knife,two forks, tablespoon, can opener, and 1/2 measuring cup
  • Open can of chicken with can opener
  • Drain the can of chicken with the lid of the can
  • Pour chicken into bowl
  • Using forks shred the chicken
  • Using the cutting board and knife cut celery into dices
  • Add diced celery to bowl
  • Using cutting board and knife cut hard boiled eggs into small pieces
  • Add hard boiled egg to bowl
  • Add 6 tablespoons mayo to bowl
  • Add 1/2 cup relish to bowl
  • Add as much salt and pepper as you would like
  • Stir all the ingredients in the bowl
  • Enjoy it by itself or can be put on bread or crackers

  • 5 tbsp all purpose flour
  • 1 1/2 tbsp brown sugar
  • 3/4 tsp ground cinnamon
  • 1/4 tsp baking powder
  • 1/8 tsp salt

Cream Cheese Icing

  • 1 tbsp cream cheese
  • 2 tbsp powdered sugar
  • 1 tsp milk

Instructions

  • Add 2 tablespoon apple sauce to mug
  • Add 1 tablespoon vegetable oil to mug
  • Add 2 tablespoons milk to mug
  • Add 1/4 teaspoon vanilla extract to mug
  • Add 5 tablespoons all purpose flour to mug
  • Add 1 1/2 tablespoons brown sugar to mug
  • Add 3/4 teaspoon ground cinnamon to mug
  • Add 1/4 teaspoon baking powder to mug
  • Add 1/8 teaspoon salt to mug
  • Using a fork mix all ingredients together until smooth
  • Place mug in microwave for 1 minute or until top to firm
  • Grab a small bowl
  • Add 1 tablespoon cream cheese to bowl
  • Microwave bowl for 15 seconds until cream cheese is soft
  • Add 2 tablespoons powdered sugar to bowl
  • Add 1 tablespoon milk to bowl
  • Mix all ingredients in bowl until smooth
  • Add cream cheese mixture on top of mug and enjoy!
