Homemade Orange Juice

Equipment

  • Blender
  • 1 TBSP

Ingredients

  • 1 Tbsp Lemon juice
  • 1 Tbsp Sugar
  • 3 Oranges

Instructions

  • Grab a cutting board and knife
  • Grab a plate
  • Peel 3 oranges
  • Take all of the seeds out
  • Cute the orange into small slices
  • Add the oranges to the blender
  • Add 1 tbsp of lemon juice to blender
  • Add 1 tbsp sugar to blender
  • Turn the blender on low medium for 30 seconds
  • Turn the blender off. The oranges should be crushed & pulpy
  • Grab a strainer and white large bowl
  • Place the strainer over the bowl
  • Pour the blender into the strainer, the pulp should stay in the strainer
  • Pour the juice into a cup and enjoy!

Chocolate Blackberry Pudding

Ingredients

  • 3 sticks of butter
  • 14 oz chocolate
  • 2 cups sugar
  • 6 eggs
  • 2/3 cups flour
  • 2 cups frozen blackberries

Instructions

  • Preheat over 400F.
  • Grease ramekins.
  • In a microwave safe mixing bowl that is big enough to take all the ingredients later, melt the butter and chocolate in the microwave in 30 second bursts, stirring frequently.
  • Once the chocolate and butter is melted, let it cool slightly.
  • Stir in all the remaining ingredients.
  • Scrape the mixture evenly into each ramekin, and place in the oven for 20 minutes.
  • The pudding should be set around the edges, with a distinct wobble in the middle.
  • Let cool for a few minutes, before serving.

Broccoli Apple Salad

Ingredients

  • 4 cups small dices broccoli florets
  • 2 small gala apples, cored and diced
  • 1 cup sunflower seeds
  • 1 cup matchsticks carrots, roughly chopped
  • 1/2 cup raisins or dried cranberries
  • 1/4 cup chopped red onion

Dressing

  • 3/4 plain Greek yogurt
  • 1/3 cup mayo
  • 1 1/2 Tbsp. apple cider vinegar
  • 3 Tbsp. honey
  • Salt

Instructions

  • For the dressing: In a medium bowl, whisk together Greek yogurt, mayo, vinegar, honey and season with salt to taste (about 1/4 tsp.). Chill until ready to use.
  • For the salad:
    • Dice broccoli
    • Dice apples
    • Dice onions
    • Cut carrots in matchstick (thin, short), optional use grater
  • In a salad bowl, toss together broccoli, apples, sunflower seeds, carrots, raisins and cranberries and red onion
  • Pour dressing in and toss until evenly coated.
  • Enjoy!

Equipment

  • 6 5-ounce ramekins (or coffee cups / jars )

Ingredients

For the Custard

  • 2 cups heavy cream 35% fat
  • 5 egg yolks 80 grams
  • 1/2 cup white sugar
  • 2 teaspoons vanilla extract
  • pinch of salt

For the Caramel topping

  • 6 tablespoons caster sugar

Instructions

  • Preheat your oven to 325 °F (160 °C) and set a pot with water over medium heat (for the water bath).
  • separate the egg whites, from the egg yolks carefully. Discard the egg whites
  • Add the egg yolks, the sugar, the vanilla extract and the salt to a large bowl and whisk to combine.
  • Heat the cream until almost boiling and slowly add it to the egg yolk mixture whisking continuously until incorporated.
  • Pour the mixture into the ramekins filling them half way, place them inside a baking pan and fill the baking pan with boiling water about 1 ¾ inches deep (this is the water bath)
  • Bake in the middle rack of the oven for 30-35 minutes or until the surface of the cream is set and the middle is still jiggly.
  • Wait until the cream is cool, cover with plastic wrap and chill in the fridge
  • Just before serving, sprinkle each ramekin with 1 tablespoon sugar and burn it with a torch. We will use the broil setting on the ovens instead of a torch.

Notes

  • The amount of sugar is enough to give the cream a nice taste without being overly sweet. If you like things sweeter, you can add a couple more tablespoons.
  • Add the hot cream to the yolk mixture gradually, otherwise you risk cooking the yolks.
  • Cooking time can vary depending on the size of the ramekins.

Cornbread For One

Ingredients

  • 2 1/2 tablespoons salted butter
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup + 1 tablespoon yellow cornmeal
  • 1/4 cup all purpose flour
  • 2 tablespoons sugar
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt

Instructions

  • Heat oven to 400 degrees
  • Melt the butter
  • In a medium sized bowl, whisk together the melted butter, milk, and egg until well blended
  • In a separate bowl, mix together the cornmeal, flour, sugar, baking powder and salt
  • Add the cornmeal mixture to the milk mixture and stir just until the flour is moistened.
  • Pour batter into small greased pan, mini cast iron skillet or ramekin
  • Bake 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean. Serve warm.
