Egg Frittatas

Individual Egg Frittatas (Muffin Tin Recipe)

Equipment

  • Muffin tin (4 slots)
  • Mixing bowl
  • Fork or whisk
  • Measuring cups/spoons
  • Spoon

Ingredients

  • 4 eggs
  • 2-3 Tablespoons milk
  • 1/4 cup shredded cheese
  • 1/4- 1/2 cup cup chopped fillings meat or vegetables or both
  • Salt and pepper
  • Cooking spray or oil

Instructions

Frittata Instructions

  • Wash hands and preheat oven to 375°F. Spray muffin tin.
  • Chop all veggies and meats into small dice
  • Crack 4 eggs into bowl.
  • Add milk, salt, and pepper. Whisk.
  • Add fillings and cheese into muffin cups.
  • Pour egg mixture into cups (3/4 full).
  • Bake 18–22 minutes until firm.
  • Cool 5–10 minutes and remove.

Eat & Store Plan

  • Eat 2 frittatas now.
  • Cool and freeze the other 2.

Labeling Practice

  • Write: Name, Egg Frittatas, Date, Reheat before eating.

Instructions

  • Wash hands.
  • Place eggs in small pot.
  • Fill pot with enough water to cover eggs by 1 inch.
  • Put pot on stove and turn heat to high.
  • When water starts boiling, set timer for 10–12 minutes.
  • When timer goes off, turn off stove.
  • Carefully use spoon to move eggs into cold water.
  • Let cool for 5 minutes.
  • Peel shell and enjoy.

  • ½ cup oats
  • ½ cup milk
  • 1 tbsp chia seeds optional
  • 1 tbsp honey
  • ¼ cup fruit

Instructions

Steps

  • Wash hands.
  • Measure oats into jar or container.
  • Add milk.
  • Stir in chia seeds and honey.
  • Add fruit.
  • Put lid on container.
  • Label with name/date.
  • Place in refrigerator.

Buffalo Chicken Pinwheels

Ingredients

  • 1/2 cup shredded rotisserie chicken
  • 1 oz cream cheese softened
  • 1 tbsp ranch dressing
  • 2 tsp buffalo sauce any spice level
  • 2 tbsp shredded cheddar cheese
  • 1 tsp finely chopped green onions
  • 1 large flour tortilla or sub GF Tortilla
  • Optional: sprinkle of blue cheese crumbles or diced celery

  • In a small bowl, mix the chicken, cream cheese, ranch, buffalo sauce, cheddar, and green onions.
  • Spread evenly over the tortilla.
  • Roll tightly into a log.
  • Chill for 10–15 minutes if you want cleaner slices.
  • Slice into 3–4 pinwheels.
  • Optional Dip
  • Serve with 1 tablespoon of ranch or blue cheese dressing on the side.
  • This makes a great quick lunch with fruit or chips on the side.
