Toaster Oven Cherry Pie Bars

Ingredients

Cherry filling

  • 4 tbsp. cornstarch
  • 1/2 c water
  • 5 1/2 c of pitted cherries
  • 2 tbsp. of lemon juice
  • 3/4 c granulated sugar
  • 2 tbsp. vanilla extract

Bars

  • 1 c of butter, softened
  • 2 c granulated sugar
  • 3/4 tsp salt
  • 4 large eggs
  • 1 tsp vanilla extract
  • 3 c all-purpose flour
  • 1 tsp baking powder

Instructions

  1. Wash, measure, and pit cherries.
  2. Measure the cornstarch and water.
  3. Whisk the cornstarch and water together to create a slurry.
  4. Measure lemon juice, sugar, and vanilla  extract (for cherry filling).
  5. Add the pitted cherries, lemon juice, sugar and vanilla to the slurry.
  6. Transfer mixture to large pot over medium heat.
  7. Bring mixture to a boil, stirring often. Then turn hear down to low.
  8. Cook, continuing to stir often, for 15 minutes (or until the mixture has thickened).
  9. Take mixture off of heat and let them cool to room temperature.
  10. Preheat toaster oven to 350 degrees F.
  11. Measure butter, sugar, and salt into a large mixing bowl. Soften butter.
  12. Beat these three ingredients together until smooth.
  13. Add eggs one at a time, beating them into the mixture until combined.
  14. Measure vanilla extract (for bar mixture).
  15. Add to mixture and give a quick stir.
  16. Measure flour and baking powder.
  17. Whisk together these two ingredients.
  18. Add the dry mixture to the wet ingredients and beat until you see no more flour, then scrape down sides of bowl and fold in any dry ingredients.
  19. Spray baking pan with cooking spray.
  20. *THIS STEP IS TRICKY, READ THE WHOLE STEP* – Add 3 cups of the batter evenly into the pan. This will NOT be all of the batter.
  21. Top the batter in the pan with prepared cherry filling.
  22. Dot the top of the gilling with the remaining batter.
  23. Bake of 30-40 minutes.
  24. Let bars cool before slicing and serving.

IGNITE’s Ground Beef Tacos

Ingredients

  • 1.5 lbs lean ground beef
  • 1.5 medium onion 
  • 2 tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1.5 cans (8 oz) tomato sauce
  • 16 Taco Shells (12 Count)
  • 3 cups shredded Cheddar cheese (6 oz)
  • 4 cups shredded lettuce
  • 3 medium tomatoes, chopped
  • 1.5 cup Old El Paso™ Thick ‘n Chunky salsa
  • 1.5 cup sour cream, if desired

Directions

  1. Dice onion.
  2. Shred lettuce.
  3. Dice tomatoes.
  4. Grate cheese.
  5. Pre-heat oven to 250°F.
  6. Get out large skillet and a colander.
  7. In large skillet, brown ground beef and onion over medium heat for 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently.
  8. Drain beef using colander.
  9.  Use can opener to open can of tomato paste.
  10. Measure out chili powder, salt, and garlic powder and put in small bowl.
  11. Use can opener to open can of tomato paste.
  12. Put ground beef back onto the skillet.
  13. Add spices and tomato sauce to beef.
  14. Reduce heat to low
  15. Cover and simmer 10 minutes.
  16. While beef mixture is simmering, place taco shells onto ungreased cookie sheet or pan.
  17. Heat in toaster oven at 250°F. for 5 minutes.
  18. Open salsa and sour cream.
  19. Assemble tacos to your preference using the beef mixture, shredded cheese, lettuce, tomato, salsa and sour cream.
