Easy Pecan Pie Bars

Ingredients

  • 3 each eggs
  • 2 1/4 cup cups brown sugar, packed
  • 2 cups cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 cups cups pecans, chopped*
  • 1 1/2 tsp teaspoons vanilla extract

Instructions

  • Preheat oven to 300 degree F.
  • In a mixing bowl, beat the 3 eggs.
  • Add the 2 1/4 cups packed, brown sugar.
  • Stir in the 2 cups of flour, 1 tbsp baking powder, and 1/2 tsp salt until smooth.
  • Add the pecans and vanilla (dough will be stiff).
  • Grease a 9×13 inch baking pan.
  • Spread dough in the greased baking pan.
  • Bake at 300 degrees Fahrenheit for 30 to 35 minutes (or until a toothpick inserted near the center comes out clean)
  • Cool before cutting.

Notes

*If you bought whole nuts, put 2 cups in a large Ziplock bag, remove all the air, and crush by rolling with a rolling pin

Ingredients

  • 16 Ounces refrigerated biscuit dough
  • 4 Ounces  Mozzarella Cheese
  • 4 tbsp Unsalted Butter
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 2 tbsp Parsley

Instructions

  • Preheat oven to 400F
  • Grab a baking sheet and line it with aluminum foil and spray the sheet with cooking spray
  • Separate biscuits into 4 equal pieces
  • Place cheese into the center of each piece
  • Wrap the dough around the cheese
  • Place on baking sheet with the seam side down
  • Bake for 10 minutes at 400F
  • Watch them closely in the last minutes of baking to make sure they do not burn 
  • While the rolls are baking grab a bowl
  • In the bowl add the butter and microwave for 60 seconds or until melted
  • Using a spoon combine the Italian seasoning, garlic powder, and salt with the butter and stir together
  • Once rolls are done cooking apply the butter mixture using a brush to each roll

Roasted Almonds

Ingredients

  • 2 cups Raw Almonds
  • 1 tbsp Olive Oil
  • 1 tsp Smoked Paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt

Instructions

  • Preheat oven to 350ºF.
  • In a large bowl, combine the almonds and olive oil and stir with a spoon to coat.
  • Add the smoked paprika, garlic powder and salt to almonds and oil toss to coat evenly.
  • Spread the nuts on a rimmed baking sheet, making sure they are spread evenly.
  • Bake for 5 minutes, remove from oven to stir.
  • Return the nuts to the oven and bake for an additional 5 minutes.
  • Keep a close eye on these, they can burn quickly!
  • Let cool then enjoy!

Notes

Make a Honey-Cinnamon sweetened version by using:
  • 2 cups whole raw almonds
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon honey
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt 

Pumpkin Spice Pretzel Bites

Ingredients

  • 1 can refrigerated biscuit dough
  • 2 tbsp baking soda
  • 1 1/2 cup warm water
  • 1/2 cup melted butter
  • 1 cup granulated sugar
  • 2 tsp pumpkin spice/cinnamon

Instructions

  • Preheat oven to 400 degrees
  • Line large baking sheet with parchment paper/foil
  • Using cutting board and knife cut each biscuit into sixths
  • Roll biscuit pieces into ball
  • Place on baking sheet
  • Put to the side
  • Add 1 1/2 cup of warm water to bowl
  • Add 2 tbsp of baking soda to bowl
  • Stir until baking soda is dissolved
  • Brush baking soda solution onto each piece of dough
  • Let dough balls sit until dried (2 mins)
  • Brush with about 1 tbsp melted butter
  • Bake until golden 10-12 mins
  • Stir 1 cup of sugar and 2 tsp of pumpkin spice in small bowl
  • When pretzels are cool toss in melted butter
  • Then toss in pumpkin spice mixture
