Breakfast Tacos
Breakfast in a tortilla
Equipment
- Medium Bowl
- Nonstick Skillet
- Mixing Spoon
Ingredients
- 4 large eggs
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1 tablespoon unsalted butter
- corn tortillas warmed
- Optional Fillings: avocado, thinly sliced, salsa, Mozzarella, shredded, Cheddar, shredded, fresh cilantro, bacon
Instructions
- In a medium bowl, beat the eggs with 1/4 teaspoon each salt and pepper.
- Heat the butter in a large nonstick skillet over medium-high heat.
- Cook the eggs, stirring, until set but still soft, 2 to 3 minutes.
- Divide the eggs among the tortillas.
- Top with whatever toppings you like. Example: avocado, salsa, Monterey Jack, and cilantro.
