Ingredients
- Onion, sliced
- Bell pepper, sliced
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- Shredded cheese of choice
- Diced avocado (optional)
- Tortilla chips
- Olive oil
Instructions
- Preheat oven to 400 degrees
- Cut onions and bell peppers into slices
- Dice tomatoes
- Dice avocados
- On a stovetop, heat a skillet with 1 tablespoon of olive oil over medium heat
- Add onions and peppers to the skillet and sauté until tender, about 5 minutes
- Turn off the heat and sprinkle a pinch of salt and pepper (optional)
- Add chips to a baking sheet
- Top the chips with black beans, onions, and peppers
- Sprinkle cheese on top
- Bake in the oven until cheese melts
- Add diced tomatoes and diced avocado
- Enjoy
