Vegetable Nachos

Equipment

  1. Skillet
  2. Stovetop
  3. Knife
  4. Cutting board

Ingredients

  1. Onion, sliced
  2. Bell pepper, sliced
  3. 1 can black beans, drained and rinsed
  4. 1 cup diced tomatoes
  5. Shredded cheese of choice
  6. Diced avocado (optional)
  7. Tortilla chips
  8. Olive oil

Instructions

  1. Preheat oven to 400 degrees
  2. Cut onions and bell peppers into slices
  3. Dice tomatoes
  4. Dice avocados
  5. On a stovetop, heat a skillet with 1 tablespoon of olive oil over medium heat
  6. Add onions and peppers to the skillet and sauté until tender, about 5 minutes
  7. Turn off the heat and sprinkle a pinch of salt and pepper (optional) 
  8. Add chips to a baking sheet 
  9. Top the chips with black beans, onions, and peppers 
  10. Sprinkle cheese on top 
  11. Bake in the oven until cheese melts 
  12. Add diced tomatoes and diced avocado  
  13. Enjoy 

Apple Crisp

Ingredients

Streusel

  • 3/4 cup all purpose flour (or whole wheat)
  • 3/4 cup old fashioned oats
  • 1/2 cup packed brown sugar
  • 1/2 tsp cinnamon
  • 1/2 cup cold butter cut into pieces

Filling

  • 6 cups apples – peeled and chopped (about 6)
  • 1/2 cup sugar
  • 2 tbsp flour
  • 1/2 tsp cinnamon
  • 1 tsp lemon juice

Instructions

  • Heat oven to 375°F.
  • Wash, peel and chop apples
  • Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In medium bowl, mix 3/4 cup flour, the oats, brown sugar and 1/2 teaspoon cinnamon until blended.
  • Cut in cold butter, using fork or pastry blender, until mixture is crumbly. (Do not overmix.) Set aside.
  • In large bowl, mix all Filling ingredients until well coated.
  • Spread Filling ingredients evenly in baking dish.
  • Sprinkle streusel over top.
  • Bake 30 to 35 minutes or until topping is golden brown and juices are bubbling along edges.
  • Cool at least 20 minutes before serving.
  • While Apple Crisp cools, be sure to clean up from cooking (wash dishes, wipe counters, put ingredients away)

60 – second chocolate chip cookie in a mug recipe

Equipment 

  1. Tablespoon 
  2. ¼ measuring cup 
  3. Mug  
  4. Microwave  

Ingredients 

  1. 1 tablespoon melted butter 
  2. 1 tablespoon sugar 
  3. 1 tablespoon brown sugar 
  4. Pinch of salt 
  5. 1 egg yolk 
  6. ¼ cup all- purpose flour 
  7. 2 tablespoons chocolate chips 
  8. Cooking spray of choice 

Instructions 

  1. Lightly coat inside of mug with a little bit of cooking spray 
  2. Inside of the mug first mix 1 tablespoon butter, 
  3. 1 egg yolk,  
  4. 1 tablespoon sugar, 
  5. 1 tablespoon brown sugar,  
  6. Add a pinch of salt. 
  7. Stir in ¼ cup flour 
  8. Add 2 tablespoons of chocolate chips 
  9. Microwave for 1 minute 
  10. Let cool down before eating 
  11. Enjoy! 

Strawberry Banana Parfait

Equipment 

  1. Cutting board 
  2. Knife 
  3. Blender 
  4. ½ measuring cup 

Ingredients 

  1. 3 Strawberries  
  2. 1 banana 
  3. ½ cup of Vanilla yogurt 
  4. 1 Granola bar 

Instructions 

  1. Rinse strawberries 
  2. Grab a knife and cutting board  
  3. Cut strawberries in halves 
  4. Slice bananas   
  5. Measure 1/2 cup of yogurt 
  6. Place yogurt in bowl covering the bottom 
  7. Measure ½ cup of fruit  
  8. Place fruit on top of yogurt 
  9. Place another ½ cup of yogurt on top of fruit 
  10. Top with ½ cup of granola 
  11. Enjoy! 

Tortilla Pizza

Equipment 

  1. Baking Sheet 
  2. Aluminum Foil 
  3. Plate 
  4. Spatula 
  5. Non-Stick Cooking Spray 
  6. Knife 
  7. Cutting board 

Ingredients  

  1. 1 Large Flour Tortilla 
  2. 1/4 cup of Marinara Sauce 
  3. 1/3 cup of mozzarella cheese 
  4. Pepper and onion 

Instructions 

  1. Preheat oven/toaster 400 degrees 
  2. Place tortilla on backing sheet with tin foil 
  3. Spray tin foil with non-stick cooking spray 
  4. Cut peppers and onions 
  5. Pour 1/4 cup of Marinara sauce on tortilla 
  6. Spread the sauce evenly on the tortilla 
  7. Sprinkle a 1/3 cup of mozzarella cheese evenly on top of sauce 
  8. Add onions and peppers 
  9. Place baking sheet in oven 
  10. Set timer for 10 mins or until cheese is melted 
  11. After timer goes off, take pizza out of the oven 
  12. Remove pizza from baking pan using spatula
  13. Let cool and enjoy

Microwave 4- minute chicken quesadillas

Equipment 

  1. Microwave safe plate 

Ingredients 

  1. 1 large flour tortillas 
  2. ½ cup cooked shredded chicken (can use store bought chicken or you can use chicken you already have) 
  3. ½ onion or bell pepper, diced 
  4. ¼ cup shredded cheddar cheese 

Instructions 

  1. Microwave 2 tortillas on a plate until slightly crispy 
  2. Mix ½ cup shredded chicken, onion, and pepper in a bowl 
  3. Microwave for 1-2 minutes 
  4. Spread chicken and vegetables on one tortilla 
  5. Add tomato 
  6. Cover chicken and vegetables with cheese 
  7. Place back in microwave 
  8. Cook for 30 seconds to 1 minute  
  9. Enjoy! 

Pigs in a blanket

Equipment 

  1. Cutting board 
  2. Knife  

Ingredients 

  1. Crescent rolls 
  2. Hot dogs 
  3. Mustard (optional) 
  4. Ketchup (optional) 

Instructions 

  1. Heat oven to 365 degrees 
  2. Spray tray/cookie sheet with cooking spray 
  3. Cut hot dog into 4 or 5 pieces 
  4. Cut crescent triangles in half  
  5. Roll crescent dough around a mini hot dog  
  6. Repeat until there is no more dough or hot dogs 
  7. Bake for 14-16 minutes 
  8. Serve with ketchup and mustard 

Easy skillet potatoes

Equipment 

  1. Microwave- safe plate 
  2. Skillet 
  3. Knife 
  4. Cutting board 
  5. Potato peeler (optional) 

Ingredients 

  1. 1-2 potatoes 
  2. Seasoning of choice  
  3. 2 tablespoons of olive oil 
  4. 2 tablespoons butter 

Instructions 

  1. Peel potato until no skin 
  2. Cut potatoes into small quarters (up, down, then across) 
  3. Place potatoes onto microwave safe plate 
  4. Heat in microwave for 3 ½ – 4 ½ minutes 
  5. Stick knife into potato to make sure it goes through (this means it’s done) 
  6. Season potatoes 
  7. Place 2 tablespoons of olive oil and 2 tablespoons of butter in skillet 
  8. Place over medium – high heat 
  9. Allow butter to melt 
  10. Add potatoes to skillet 
  11. Cook potatoes 8-10 minutes (be sure to flip potatoes every 2-3 minutes for even browning) 
  12. Enjoy! With ketchup (optional) 

Oven S’mores

Equipment

  1. Sheet pan or aluminum foil
  2. Oven/toaster oven

Ingredients

  1. Graham crackers
  2. Marshmallows
  3. Hershey chocolate bar

Directions

  1. Turn the oven on broil and then line a baking sheet with parchment paper.  
  2. Break all the graham crackers and chocolate into squares, to prepare for building the smores. 
  3. Place graham cracker squares on the sheet pan 
  4. Place the chocolate on top of the graham crackers and then top each piece of chocolate with a marshmallow.   
  5. Place the sheet pan on the center rack of the oven and broil the smores for about 1 to 2 minutes. (Make sure to keep your eyes on this while they are in the oven. The marshmallows can burn very easily!) 
  6. Once the marshmallows are at the toastiness level that you like, remove them from the oven and press another graham cracker square on top of each marshmallow to squeeze them all together.  
  7. Enjoy your smores from the oven! 

Stuffed Peppers

 

Equipment 

  1. Cutting board 
  2. Knife 
  3. Skillet 
  4. Spoon 
  5. Spatula

Ingredients 

  1. Bell peppers 
  2. Ground beef 
  3. Onion 
  4. Seasonings of choice 
  5. 1 cup marinara sauce 
  6. ½ cup cheese of choice 

Instructions

  1. Preheat oven to 350 degrees 
  2. Wash and dry bell pepper 
  3. Cut pepper in half and place on aluminum foil 
  4. Remove membrane and seeds with a knife 
  5. Season bell pepper with a pinch of salt and pepper 
  6. Chop onion into small pieces 
  7. Heat a pan over medium high heat 
  8. Add 1 tsp of olive oil to pan 
  9. Add onions to pan and sauté for 3-4 minutes 
  10. Add ground beef to pan and season 
  11.  Cook meat until brown 
  12. Add 1 cup marinara sauce to meat and mix 
  13. Spoon the meat and sauce mixture into the peppers 
  14. Sprinkle 1/2 cup cheese on top 
  15. Place in oven for 25-30 minutes 
  16. Let cool and enjoy
