No Bake Pumpkin Pie

Equipment

  • 1 Handmixer or whisk
  • 1 Large Bowl

Materials

  • 1 cup Pumpkin puree
  • 3.4 ounces Instant vanilla pudding
  • 1/4 cup Milk
  • 2 teaspoons Pumpkin pie spice
  • 8 ounces Cool Whip
  • 1 Pie crust 9-inch

Instructions

  • Add 1 cup of pumpkin puree to a large bowl
  • Add 3.4 ounces of pudding to the large bowl
  • Add 1/4 cup of milk to the large bowl
  • Add 2 teaspoons of pumpkin pie spice to a large bowl
  • Place whisks in a hand mixer
  • Turn on the hand mixer
  • Mix all the ingredients until smooth
  • Carefully fold in 8 ounces of Cool Whip
  • Pull out pie crust
  • Pour ingredients from the large bowl into the pie crust
  • Place pie in the refrigerator to chill before serving
  • Chill until it sets enough to slice or 3 hours

Rice Krispies Treats


Ingredients

  • 8 tablespoons unsalted butter
  • 15 ounces of marshmellows, mini or regular
  • 2 teaspoons vanilla extract
  • 9 cups rice krispies cereal
  • 1 cup m&ms (holiday colors if wanted)
  • 1/2 cup sprinkles if wanted

Instructions

  • Line a 9×13-inch baking pan with foil and spray with cooking spray. Set aside.
  • Melt the butter and the marshmallows in a medium sized saucepan over medium-low heat. Once the marshmallows are melted, remove from heat and stir in the vanilla. Quickly stir in the cereal. Stir in the candy and sprinkles.
  • Pour the marshmallow-cereal mixture into the prepared baking dish. Press to flatten. (I like to spray my hands with cooking spray and use them to press the treats into the pan – just be careful not to burn yourself.) Cool completely before cutting into squares.

Ingredients

  • 4 apples
  • 2 Tbsp unsalted butter
  • 2 Tbsp brown sugar
  • 1 Tbsp lemon juice
  • 1 Tsp ground cinnamon

Instructions

  • Peel: Peel apples.
  • Chop: Cut apples evenly into bite-sized pieces.
  • Stew: Place apples and all remaining ingredients in a large pot or saucepan. Set over medium heat and cover. Then lower heat, to bring to a simmer. Cook, stirring often, until apples are fork tender, about 5 to 7 minutes.
  • Serve: Serve warm or cold by themselves, on ice cream, yogurt, or oats!

No-Bake Cranberry Granola Cookies

Ingredients

  • 11 oz Nature Valley oats ‘n dark chocolate protein granola
  • 1 cup chopped sweetened dried cranberries
  • 1 cup pistachio nuts
  • 3/4 cup packed brown sugar
  • 1/2 cup corn syrup
  • 1/4 cup creamy peanut butter
  • 1 teaspoon vanilla

Instructions

  • In a bag, crush Nature Valley bars into small pieces using a rolling pin
  • Line cookie sheet with waxed paper.
  • In large bowl, mix granola, cranberries and pistachio nuts.
  • In 2-quart saucepan, mix brown sugar, corn syrup and peanut butter.
  • Heat to boiling over medium-high heat (2 or 3 setting on Hot Plate) stirring constantly.
  • Boil and stir 1 minute.
  • Remove from heat
  • Stir in vanilla.
  • Pour syrup over granola mixture, stirring until evenly coated.
  • Using a 1/4 measuring cup, scoop mixture onto waxed paper.
  • Cool completely, about 30 minutes.
