Mini Wonton Cannoli Cups

Mini Wonton Cannoli Cups

Course Dessert

Equipment

  • Oven
  • Cupcake baking pans
  • Bowl
  • Spoon
  • Measuring cups and spoons

Ingredients

  • 1 1/2 Cup Ricotta cheese
  • 2/3 Cup powdered sugar
  • 1/2 tsp vanilla extract or almond extract
  • 1/2 cup Mini semi sweet chocolate chips
  • 5 wonton wrappers

Instructions

Cannoli filling

  • Grab medium size mixing bowl and spoon
  • Add 1 and 1/2 cup of ricotta cheese to bowl
  • Stir for about 2 minutes until cheese is smooth and creamy
  • Add 2/3 cup of powdered sugar to bowl
  • Mix until smooth
  • Add 1 tsp of vanilla or almond extract
  • Add 1/2 cup of mini chocolate chips
  • Mix all ingredients together

Wonton

  • Preheat oven to 350 degrees
  • Spray cupcake pans with cooking spray
  • Place wonton in cupcake holders
  • Place wontons in oven for 5 mins
  • Remove from oven
  • Scoop canoli filling into wonton holders
  • Place back into oven for 5 mins or until golden brown
  • Let cool
  • Add chocolate chips to the top
  • Enjoy!

Ingredients

  • 2 cups all purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3/4 cup white sugar
  • 1 egg
  • 1 cup milk
  • 1/4 cup oil
  • 1 cup blueberries
  • 1 pack muffin tin liners

Instructions

  • Preheat oven to 400 degrees F
  • Stir together the flour, baking powder, salt and sugar in a large bowl
  • Make a well in the center
  • In a small bowl beat egg with a fork
  • Stir in milk and oil and pour all at once into the well in the flour mixture
  • Mix quickly and lightly with a fork until moistened, but do not beat
  • Add 1 cup fresh blueberries and stir
  • The batter will be lumpy
  • Pour the batter into paper lined muffin pan cups
  • Bake for 25 minutes, or until golden

Baked Buffalo Chicken Wontons

Baked Buffalo Chicken Wontons

Ingredients

  • 12 Wonton Wrappers
  • 4 oz cream cheese softened
  • 1/4 cup sour cream
  • 1/4 cup colby jack cheese
  • 1 cooked chicken shredded
  • 1/4 cup buffalo sauce

Instructions

Wontons

  • Turn on oven and preheat to 350 degrees
  • Spray muffin pan with cooking spray
  • Place one wonton wrapper in each muffin cup
  • Bake for 5 minutes or until lightly brown
  • Remove from oven and let cool

Chicken

  • Take chicken and put in bowl
  • Use two forks to shred chicken in pieces place to the side

Buffalo chicken Cream cheese filling

  • In mixing bowl add 2 oz of cream cheese
  • Add 1/8 cup of sour cream
  • Add 2 tablespoons of buffalo sauce
  • Add 1/8 cup of shredded cheese
  • Add shredded chicken
  • Mix all ingredients together

Final steps

  • Spoon filling into wonton cups
  • Place wonton cups in oven again and bake for 8 more minutes or until filling is warm
  • Top with a couple green onions
  • Enjoy

Creamy Spinach Pin Wheels

 

Creamy Spinach Pin Rolls

Ingredients

  • 8 oz Cream cheese
  • 8 oz monterey jack cheese shreeded
  • 1/4 tsp garlic powder
  • 1/4 yellow onion dice small
  • 8 oz cooked spinach
  • 1 roll of pastry sheets
  • 1 egg
  • 1 tbsp water

Instructions

  • Turn on oven and preheat oven to 400 degrees
  • Line baking sheet with aluminum foil
  • Rinse a large handful of spinach and dry it
  • Get a hot plate and turn it on low-medium
  • Add spinach to the pan and let it cook down until it is soft
  • Take the spinach off the heat
  • Add 1/2 cup of cream cheese to a bowl
  • Add 1/2 cup of Monterey jack cheese
  • Add a pinch of garlic powder to bowl
  • Add chopped onion to bowl
  • Mix all ingredients together
  • Add spinach into the cream
  • In new bowl crack and egg and add 1 tbsp of water
  • Wisk together
  • Unroll the pastry sheet
  • Brush both sides with egg and water mixture
  • Spread Cream Cheese and spinach mixture on one side of pastry sheet
  • Roll up pasty and slice in to pin wheels
  • Place on baking sheet and bake at 400 degrees for 20 mins or until golden

Ingredients

  • 1/2 cup melted butter
  • 1 cup white sugar
  • 1/4 cup cocoa powder
  • 1/2 tsp vanilla extract
  • 2 eggs
  • 3/4 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup walnuts or chocolate chips

Instructions

  • Preheat the oven to 350 degrees F
  • Grease an 8x8-inch pan
  • Melt butter in a microwave safe dish in the microwave
  • Combine the melted butter, sugar, cocoa powder, vanilla, eggs, flour, baking powder, and salt
  • Stir together until just combined and no dry ingredients are left
  • Add nuts or chocolate chips if desired and gently stir to mix in
  • Spread the batter into the prepared pan
  • Bake in preheated oven for 20 to 30 minutes (until desired doneness)

  • 2 tsp baking powder
  • 1/2 cup butter (room temperature)
  • 1 cup white sugar
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • 3/4 cup milk (room temperature)

Instructions

  • Preheat oven to 350 degrees F
  • Lightly grease an 8-inch square baking pan
  • Sift together the flour, salt, and baking powder
  • Cream together (Beat) butter and white sugar until fluffy and light in color
  • Add eggs one at a time, beating well after each addition
  • Stir in vanilla
  • Add the sifted dry ingredients to the creamed mixture
  • Add the milk to the ingredients
  • Stir until just blended
  • Pour batter into prepared pan
  • Bake at 350 degrees for 25-35 minutes (until cake springs back when lightly touched)
  • Let cool in pan for 10 minutes before removing from pan and placing on a wire rack to cool completely
