Ingredients

  • 6 pounds Apples Peeled, Cored, And Cut Into 8 Slices
  • 1 cup Apple Juice Or Apple Cider
  • Juice Of 1 Lemon
  • 1/2 cup Brown Sugar Packed
  • 1 teaspoon Cinnamon More Or Less To Taste
  • Optional Ingredients: Nutmeg Maple Syrup, Allspice, Butter

Instructions

  • Combine all ingredients in a large pot and cook over medium heat, stirring occasionally, for 25 minutes.
  • Carefully puree in a food processor or blender (don’t fill too full; split into two portions if needed) until smooth.
  • Store in the fridge and serve by itself, over pork chops, over ice cream, over pancakes…or any place where applesauce is needed!

Small Batch Oatmeal Chocolate Chip Cookies

Ingredients

  • 3 tablespoons unsalted butter softened
  • 3 tablespoons brown sugar
  • l tablespoon granulated sugar
  • 1 egg yolk
  • 1/4 teaspoon vanilla extract
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup semisweet chocolate chips

Instructions

  • Preheat oven to 350F.
  • Add 3 tablespoons butter to bowl
  • Add 3 tablespoons brown sugar to bowl
  • Add 1 tablespoon granulated or white sugar to bowl
  • Bring bowl to counter
  • Use Electric mixer (on the lowest setting) to mix until it is fluffy.
  • Add 1 egg yolk to bowl
  • Add 1/4 tablespoon vanilla extract to bowl
  • Using a fork mix until well combined (about 2 minutes), scraping down the sides of the bowl as needed.
  • Add 1/3 cup all-purpose flour to bowl
  • Add 1/4 Teaspoon baking soda to bowl
  • Add 1/2 cup oats to bowl
  • Add 1/2 cup of chocolate chips to bowl
  • Add pinch of salt to bowl
  • Mix all ingredients together using your hands or mixer
  • Shape cookies on cookie sheet, about 4-6 cookies
  • Put cookies in oven and bake for 9-10 minutes
  • If cookies are still gooey, add another minute and check.
  • Turn off oven once cookies are done and removed
  • Let cool for a few minutes, and enjoy!

Clean Up

  • Turn Oven off
  • Put all ingredients away
  • Seal cookies in a bag for freshness

Ingredients

  • 4 ounces Mascarpone cheese softened to room temperature
  • 4 ounces sugar free whipped topping such as Cool Whip
  • 1 tablespoon white chocolate chips
  • Fresh strawberries hulled and diced (about 2 dozen)
  • Fresh blueberries about 1 cup

Instructions

To make the cream:

  • Microwave 1 tablespoon of white chocolate chips in a microwave safe bowl for about 15 seconds.
  • Stir until melted and add in 4 ounces of Mascarpone cheese.
  • Stir until smooth and then fold in 4 ounces of sugar free whipped topping.
  • Stir gently to combine.

To assemble your parfaits:

  • Divide the ingredients equally among 4 serving glasses by adding a tablespoon or two of diced strawberries first and top with a dollop of whipped topping mixture.
  • Add a layer of blueberries and top with a dollop of whipped topping.
  • Add another layer of strawberries and top that with a few blueberries.
  • Garnish with a strawberry dipped in the whipped topping mixture.
  • Continue with remaining ingredients and serving glasses. Serve and enjoy!

  • 1/4 cup flour
  • 1/4 cup sugar
  • 2 TBSP coco
  • Pinch of salt
  • 1/4 cup water
  • 2 TBSP oil
  • 1/4 TSP vanilla

Instructions

  • In a mug add 1/4 cup flour
  • Add 1/4 cup sugar
  • Add 2 TBSP coco
  • Add pinch of salt
  • Using spoon mix ingredients
  • Add 2 TBSP oil to mug
  • Add 1/4 cup water
  • Add 2 TBSP oil
  • Mix until it is smooth and there are no lumps
  • Place in microwave for 1 minute and 45 seconds

Ingredients

  • Canalo oil
  • 1/2 cup granulated sugar
  • 1 tsp apple pie spice
  • 1 1/4 cup all-purpose flour
  • 2 tbsp packed light brown sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp kosher salt
  • 1/2 cup fresh apple cider
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 large granny smith apple

Instructions

  • Add a cup of sugar to bowl
  • Add 1/2 teaspoon of pie spice in bowl
  • Set this bowl aside for later
  • Get a large bowl from cabinet (DRY INGREDIENTS)
  • Add 1 1/4 cup of flour to bowl
  • Add 2 tbsp of born sugar to bowl
  • Add 11/2 tsp of baking powder to bowl
  • Add 1/4 tsp of salt to bowl
  • Add 1 tsp of pie spice to bowl
  • Using Wisk , wisk all ingredients together
  • Get a small bowl from cabinet (WET INGREDIENTS)
  • Add 1/2 cup of apple cider to bowl
  • Add 1 egg to bowl
  • Add 1 tsp of vanilla extract to bowl
  • Using Wisk, wisk all ingredients together
  • Combine wet ingredients to dry ingredients
  • Using electric mixer, mix all ingredients together
  • Using a peeler peel 1 large apple
  • Cut apple in half
  • Cut out core of apple
  • Use one half of apple and grate apple into bowl
  • Chop other half of apple into small pieces
  • Gently fold pieces of apple in to batter
  • Turn hot plate onto medium heat
  • Pour canola oil into skillet
  • Once oil is hot (test by sprinkling a tiny bit of water)
  • Take a spoonful of batter into oil

Ingredients

  • 1 Apple red
  • 1 tablespoon Butter
  • 1 can Crescent Dough
  • 1/2 cup Brown sugar
  • 1 sprinkle Cinnamon
  • 1 sprinkle Apple Pie Spice

Instructions

  • Using a peeler, peel one red apple
  • Using a knife and cutting board, chop apple in small pieces
  • Grab a small bowl
  • Put chopped apples in bowl
  • Add ‘/2 cup of brown sugar to bowl
  • Add a sprinkle of cinnamon
  • Add a sprinkle of apple pie spice
  • Stir all of ingredients
  • Get hot plate and skillet, turn to medium heat
  • Place a tablespoon of butter in pan
  • Add apple mixture to pan
  • Cook apples until soft
  • Remove from heat
  • Put foil on baking tray
  • Spray with cooking spray
  • Place triangle dough on foil
  • Spoon a small spoonful of apple mix onto dough
  • Roll into crescent
  • Place in toaster oven at 350 degrees cook for 12 minutes until golden brown.

Ingredients

  • 2 large eggs
  • 1 pinch of salt
  • 1 teaspoon olive oil

Instructions

  • Crack the eggs, one at a time at the mid-point between the more-rounded (wide) end and the pointier end of the egg by hitting it against the sharp edge of the small bowl. Hold the egg over the bowl with the cracked part facing up. Pry the shell open gently and allow the egg to slide into the bowl. Add the salt, and use the fork or whisk to beat the eggs until they are pale yellow. If you’re using any Yummy Extras (see below), add them in now.
  • Put the skillet on the stove and turn the heat to medium. When the skillet is hot, add the oil. Pour in the egg mixture and tilt the pan to spread the eggs around the bottom.
  • When the eggs look firm and set, gently and carefully shake the skillet to loosen the omelet.
  • Using your spatula, fold the omelet in half and then slide it onto the plate.
  • Serve right away.

Fillings
Try one or more of the following combinations, or make up your own (use about 1/2 cup of filling total):
Chopped fresh spinach, sliced mushrooms, and shredded Swiss cheese
Sliced bell peppers and scallions and shredded cheddar cheese
Salsa and chopped avocado
Chopped olives and tomatoes and crumbled feta cheese
Chopped tomatoes and fresh basil and ricotta cheese

Ingredients

  • 1 pound potatoes
  • 1 tablespoon butter
  • 4 cups cabbage shredded
  • 1 3 ounce package cream cheese
  • 1 large onion chopped
  • 1 pinch salt and ground black pepper
  • 1/2 cup skim milk

Instructions

  • Place potatoes in a large pot and cover with salted water.
  • Bring to a boil, then reduce heat to medium-low and simmer until tender, 15 to 20 minutes.
  • Drain and reserve the cooking liquid. Allow potatoes to cool until they can be handled.
  • Shred the cabbage by chopping it if not done.
  • Chop the onion if not done.
  • Boil cabbage and onion with the reserved potato water in a pot until softened, about 5 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 2-quart casserole dish.
  • Peel and cut potatoes into chunks; place in a large bowl.
  • Mash skim milk and butter into potatoes until mixture is smooth.
  • Stir drained cabbage and onion into potato mixture.
  • Fold cream cheese, salt, and black pepper into potato mixture, stirring until the cream cheese melts.
  • Pour potato mixture into prepared casserole dish.
  • Bake in preheated oven until browned, 30 to 35 minutes.
  • Turn off the oven.

  • 2 English cucumber peeled
  • 4 Cups Plain Greek yogurt
  • 3 Tbsp Minced garlic
  • 1 Tbsp Chopped dill
  • 1 1/2 Tbsp Lemon juice
  • 2 Tsp White Vinegar
  • 2 Tbsp Olive Oil
  • 4-6 Pita Bread Pockets
  • Any Vegetables you would like for dipping

Tzatziki Sauce

  • Grab a potato peeler
  • Peel the skin off the cucumbers
  • Grab a cutting board & knife
  • Cut the cucumbers into medium sized circles
  • Add cucumbers to food processor
  • Turn processor on and grate cucumbers
  • Add pinch of salt to cucumbers
  • Grab a small bowl
  • Grab a strainer
  • Place strainer over bowl
  • Place towel or paper towel over strainer
  • Pour cucumber mixture into towel
  • Pick up towel and ring out all water
  • Grab a large bowl
  • Add 3 Tbsp minced garlic to bowl
  • Add 1 tsp salt to bowl
  • Add 2 Tsp to bowl
  • Add 2 Tbsp olive oil to bowl
  • Mix together
  • Add cucumber mixture to bowl
  • Add 4 cups yogurt to bowl
  • Add a pinch of salt, pepper, and dill to bowl
  • Mix together
  • Put in fridge for 30 minutes

Pita Chips

  • Grab a cutting board & knife
  • Cut pita bread into small triangles
  • Grab a small bowl
  • Add 3 Tbsp olive oil to bowl
  • Add any seasonings you prefer
  • Brush olive oil mixture on all sides of pita chips
  • Grab the air fryer
  • Spray air fryer with pam
  • Add chips to air fryer
  • Cook temperature 325 for 4 minutes
  • Flip them cook for another 5 minutes and enjoy!

Beef Burritos

Beef Burritos

Simple, super tasty everyday beef burritos made with a homemade beef mince filling
(ground beef), rice and your choice of fillings. One of the best freezer meals ever! I use
this beef filling for all things Mexican – tacos, nachos, burritos, enchiladas etc. Feel free
to change up the fillings to your taste! Makes 8 – 10 burritos.

Ingredients

Burrito Seasoning:

  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp dried oregano
  • 2 tsp dried cumin powder
  • 2 tsp paprika
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper or to taste (optional)

Beef:

  • 1/2 tbsp olive oil
  • 2 garlic cloves
  • 1/2 onion finely chopped
  • 1 lb 1 lb beef mince ground beef, I use lean
  • 2 tbsp tomato paste
  • 3 tbsp water

Burritos:

  • 6 – 8 large soft flour tortillas or round wraps -25cm/10″+ (Note 1)
  • 3 cups cooked rice warm not piping hot (I use white long grain)
  • 3 cups iceberg lettuce or cabbage finely sliced (use cabbage if freezing)
  • 1 cup corn kernels I use canned, drained
  • 1 cup black beans I use canned, drained
  • 3 tomatoes deseeded and diced
  • 1/2 red onion finely chopped
  • Finely chopped coriander optional
  • 1 1/2 cups shredded cheese of choice melting kind

Instructions

  • Heat oil in a skillet over high heat. Add garlic and onion, cook for 2 minutes until onion is lightly browned.
  • Add beef and cook, breaking it up as you go, until it turns from red to brown.
  • Add Taco Seasoning (or use 1 packet store bought) and cook for 1 minute.
  • Then add tomato paste and water, cook for 3 minutes until the water is mostly evaporated but the beef is still juicy, not dried out.
  • Set aside to cool for 10 minutes – piping hot filling will steam the burrito, making the tortilla soggy.
  • Optional: If not warming rolled burrito, warm the tortillas before rolling (per packet directions).
  • Place a burrito on a work surface. Place 1/4 – 1/3 cup of rice just below the centre.
  • Top with 1/4 – 1/3 cup beef, then some lettuce, corn, black beans, tomato, a sprinkle of red onion, coriander and cheese.
  • Fold up the bottom to cover the filling, then fold the edges in
  • Roll up tightly, then wrap in foil. Serve as is or heat per below.
  • HEATING: To warm through, pan fry (dry pan) in the foil over medium high heat on a burner for a few minutes on each side to slightly crisp and warm the outside.
  • Turn off the burner/ stove when done.
