Chili Cheese Hot Dogs

Equipment

  • 2 Pots
  • 1 White microwave safe bowl

Ingredients

  • 1 Can Chili
  • 1 Can Nacho cheese sauce
  • 1 Pack Hot Dogs

Instructions

  • Grab a pot
  • Fill it to the middle with water
  • Turn the hotplate to high
  • Set the pot on the hotplate
  • Let pot boil until there are bubbles
  • Once the water is boiling add the hot dogs to the water
  • Set a timer for 5 minutes
  • Grab another pot
  • Turn the opposite burner of the hotplate on medium
  • Place the pot on the hotplate
  • Open the can of chili with a can opener
  • Add the chili to the pot
  • Continue to stir the chili until it is warm
  • Once the timer goes off for the hot dogs, turn off the hotplate
  • Grab a white microwave safe bow
  • Open the nacho cheese with a can opener
  • Add the nacho cheese to the bowl
  • Put the bowl in the microwave for 1 minute
  • Continue this until the cheese is warm
  • Turn off all hotplates, and assemble your hot dog

Easy apple crisp recipe! One apple baked in a touch of sugar, cinnamon, and vanilla underneath a crisp, buttery topping. A wonderful single serving dessert that can be ready in minutes!

Ingredients

For the filling

  • 1  medium apple , peeled, cored and diced into 1-inch chunks
  • 1 tbsp brown sugar
  • 1 tbsp melted butter
  • 1/8 tsp cinnamon
  • 1/8 tsp nutmeg

For the topping

  • 3 tbsp all-purpose flour
  • pinch salt
  • 2 tbsp brown sugar
  • 1/8 tsp cinnamon
  • 1 tbsp melted butter

Instructions

Make the filling

  • Heat oven to 350°F (177°C) and melt 1 tablespoon of butter to brush onto your ramekin to grease it.
  • Mix together the chopped apples, brown sugar, cinnamon, and nutmeg in a small bowl.
  • Transfer the apples to a 10-ounce ramekin.

Make the topping

  • In a small bowl, use a fork to stir together flour, salt, brown sugar, and cinnamon. Fold in the melted butter. Keep the mixture as large crumbles and do not over mix. (If over mixed it will turn into a large paste.)
  • Scatter the topping evenly over the apples, pressing down into apples if necessary so it fits. It is fine if crumble topping is still piled high as it will bake down. Place the ramekin on a small rimmed baking sheet.
  • Bake for 32-36 minutes or until apples are soft and the topping is golden.

Ingredients

  • 1 Tbsp Lemon juice
  • 1 Tbsp Sugar
  • 3 Oranges

Instructions

  • Grab a cutting board and knife
  • Grab a plate
  • Peel 3 oranges
  • Take all of the seeds out
  • Cute the orange into small slices
  • Add the oranges to the blender
  • Add 1 tbsp of lemon juice to blender
  • Add 1 tbsp sugar to blender
  • Turn the blender on low medium for 30 seconds
  • Turn the blender off. The oranges should be crushed & pulpy
  • Grab a strainer and white large bowl
  • Place the strainer over the bowl
  • Pour the blender into the strainer, the pulp should stay in the strainer
  • Pour the juice into a cup and enjoy!

Chocolate Blackberry Pudding

Ingredients

  • 3 sticks of butter
  • 14 oz chocolate
  • 2 cups sugar
  • 6 eggs
  • 2/3 cups flour
  • 2 cups frozen blackberries

Instructions

  • Preheat over 400F.
  • Grease ramekins.
  • In a microwave safe mixing bowl that is big enough to take all the ingredients later, melt the butter and chocolate in the microwave in 30 second bursts, stirring frequently.
  • Once the chocolate and butter is melted, let it cool slightly.
  • Stir in all the remaining ingredients.
  • Scrape the mixture evenly into each ramekin, and place in the oven for 20 minutes.
  • The pudding should be set around the edges, with a distinct wobble in the middle.
  • Let cool for a few minutes, before serving.

Broccoli Apple Salad

Serves: 8
Ready in 20 minutes!

Ingredients

  • 4 cups small dices broccoli florets
  • 2 small gala apples, cored and diced
  • 1 cup sunflower seeds
  • 1 cup matchsticks carrots, roughly chopped
  • 1/2 cup raisins or dried cranberries
  • 1/4 cup chopped red onion

Dressing

  • 3/4 plain Greek yogurt
  • 1/3 cup mayo
  • 1 1/2 Tbsp. apple cider vinegar
  • 3 Tbsp. honey
  • Salt

Instructions

  • For the dressing: In a medium bowl, whisk together Greek yogurt, mayo, vinegar, honey and season with salt to taste (about 1/4 tsp.). Chill until ready to use.
  • For the salad:
    • Dice broccoli
    • Dice apples
    • Dice onions
    • Cut carrots in matchstick (thin, short), optional use grater
  • In a salad bowl, toss together broccoli, apples, sunflower seeds, carrots, raisins and cranberries and red onion
  • Pour dressing in and toss until evenly coated.
  • Enjoy!

Cornbread For One

Ingredients

  • 2 1/2 tablespoons salted butter
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup + 1 tablespoon yellow cornmeal
  • 1/4 cup all purpose flour
  • 2 tablespoons sugar
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt

Instructions

  • Heat oven to 400 degrees
  • Melt the butter
  • In a medium sized bowl, whisk together the melted butter, milk, and egg until well blended
  • In a separate bowl, mix together the cornmeal, flour, sugar, baking powder and salt
  • Add the cornmeal mixture to the milk mixture and stir just until the flour is moistened.
  • Pour batter into small greased pan, mini cast iron skillet or ramekin
  • Bake 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean. Serve warm.

Individual Quiches

Ingredients

  • 1 egg
  • 1/2 cup of milk
  • 2 triangles of puff pastry
  • 1-2 tablespoon freshly grated shredded cheese
  • Optional additions: ham, broccoli, bell pepper
  • Optional seasonings: salt, pepper, onion powder, garlic powder

Instructions:

  • Preheat oven to 350 degrees
  • Grease ramekins
  • Roll out puff pastry, and line one ramekin with two triangles, like a pie crust
  • Gently press the dough into the bottom and stretch up the sides, poke holes in the bottom of the dough, careful to not go through the dough
  • In a small bowl, whisk together eggs, milk and salt and pepper
  • Prepare any additional ingredients, steam and chop broccoli, dice peppers, and dice ham
  • Place at the bottom, on top of pressed puff pastry
  • Pour the mixture over the additional ingredients
  • Sprinkle grated cheese on top
  • Cook for 20-25 minutes, or until knife comes out clean
  • Let stand for 10 minutes
  • Pro tip if you want to remove from ramekin: Easiest way to remove puff pastry once cooled is to run a butter knife around the edge to loosen it up (or eat from ramekin!)

Peanut Butter Chocolate Waffle Sandwich

Ingredients

  • 2 frozen waffles
  • 1 cup chocolate chips, or to taste
  • 2 tablespoons peanut butter

Directions

  1. Place waffles in the toaster oven and cook until halfway done, 2 to 3 minutes.

  2. Spread chocolate chips over waffles and return to toaster oven; cook until chocolate melts, 2 to 3 minutes.

  3. Spread chocolate evenly around waffle using a fork or toothpick. Spread peanut butter over chocolate layer (or Nutella here if chocolate was not used). Close waffles together making a sandwich.

Ingredients

Filling:

  • ½ cup fresh blackberries
  • 1 tablespoon white sugar
  • ½ tablespoon cornstarch

Topping:

  • 2 tablespoons all-purpose flour
  • 2 tablespoons rolled oats
  • 2 tablespoons white sugar
  • 2 tablespoons melted butter
  • ¼ teaspoon ground cinnamon

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Combine blackberries, sugar, and cornstarch in a bowl. Place into an oven-safe ramekin.

  3. Combine flour, oats, sugar, butter, and allspice in a bowl; mix well to fully incorporate butter. Add to the top of the ramekin.

  4. Bake in the preheated oven until golden on top, about 20 minutes. (Add an additional 20 minutes if using frozen fruit).

Cook’s Notes:

The type of fruit is totally up to you. Try combinations! My wholesale store has a frozen blueberry, blackberry, and raspberry blend that is terrific. Apples and cherries, pears and figs, peaches and mango…

Type of sugar and flour is up to you, I prefer white sugar with blueberries and bush fruit, brown sugar with cherries, apples, and other tree fruits. If I use apples, I add a little cinnamon into the fruit mixture as well. For firm fruit, like apples and pears, you may want to add 1 tablespoon fruit juice for added liquid, as fruit won’t mush apart like soft fruit to create a nice syrup.

A tablespoon of nuts of your choice can also be added to topping mixture.

Bake time for fresh, soft fruit is about 20 minutes. Bake time for fresh, firm fruit such as large, diced apples or frozen fruit is about 45 minutes.

Banana Bread For One

  • 1/4 cup all purpose flour
  • 1/4 teaspoon basking soda
  • 1/4 teaspoon ground cinnamon 
  • 1/8 teaspoon salt  
  • 1 medium banana, smashed  
  • 2 tablespoons sugar  
  • 1 tablespoon salter butter, melted plus some to grease the ramekin or spray 
  • 1 egg yolk  
  • 1/2 teaspoon vanilla extract  

Instructions

  • Heat the oven to 350°F (177°C) and lightly grease a 10-ounce ramekin.
  • In a small bowl, combine flour, baking soda, cinnamon, and salt together. Set aside.
  • Mash the banana with a fork and add to a medium-sized bowl.
  • Add the sugar and with an electric mixer or a wire whisk whip the banana and sugar together.
  • Add the melted butter, the egg yolk, and the vanilla; mix well.
  • Add the dry ingredients and mix until combined.
  • Pour into the ramekin and bake for 25-30 minutes until golden brown.
  • Remove from the oven and cool slightly before eating.

Expert Tip

  • Use ripe bananas. Ripe bananas make the sweetest banana bread. When bananas have plenty of brown spots on the skin, they’re perfect to use. The browner the skins, the sweeter the banana bread.
  • Buy bananas and freeze them. It’s a great idea to keep overripe bananas handy in your freezer ready for baking. If you’ve got a few forgotten bananas on your counter, freeze them, unpeeled. Freezing bananas will turn the skin black, but once peeled the flesh will be perfect for making banana bread or banana muffins.
  • Leave the batter lumpy. When mashing the banana, leave some of the banana chunks. Overmixing the batter can also result in a tough bread.
