  • 1 Electric Mixer
  • 1 Large Bowl
  • 1 Baking Sheet

Ingredients

  • 4 oz Cream cheese
  • 1/4 cup Butter (softened)
  • 3 cups Powdered sugar
  • 1 tsp Vanilla extract
  • 2 1/2 cups Coconut flakes
  • 1 tbsp Cinnamon

Instructions

  • Grab a large bowl
  • Add 4 oz cream cheese to bowl
  • Add 1/4 cup butter to bowl
  • Turn on electric mixer & mix together
  • Once smooth, add 3 cups powdered sugar to bowl
  • Add 1 tsp vanilla to bowl
  • Turn mixer on & mix together
  • Add 2 1/2 cups of coconut flakes to bowl
  • Mix together
  • Grab a baking sheet
  • Grab a pair of gloves
  • Roll the mixture into small balls
  • Grab a plate & pour cinnamon on the plate
  • Take all the balls & roll them in the cinnamon mixture
  • Place in the fridge for 20 minutes

Potato Pancake

Equipment

  • 1 Potato peeler
  • 1 Pot
  • 1 knife/cutting board
  • 1 Masher
  • 1 Hot Plate
  • 1 Bowl

Ingredients

  • 5 Potatoes
  • 8 tbsp Cornstarch
  • 2 Eggs
  • 1/2 tsp Garlic Salt
  • 1 tbsp Olive Oil
  • 1 Spatula
  • 1 Cup 2% milk
  • 2 tbsp Butter

Instructions

Mashed Potatoes

  • Wash your potatoes
  • Peel the potatoes using a potato peeler
  • Cut the potatoes into cubes
  • Fill a pot full of water
  • Fill the pot with water halfway
  • Place the pot on the hotplate & turn on high heat
  • Once the water is boiling add the potatoes to the pot
  • Cook for 15 minutes or until potatoes are soft
  • Pour the potatoes into a strainer
  • Pour the potatoes in a large bowl
  • Taking a potato masher mash the potatoes
  • Add 1 cup of milk to bowl
  • Add 2 tbsp butter to bowl
  • Season with salt and pepper
  • Place the mashed potatoes in Tupperware and place in fridge

Potato Pancake

  • Grab a large bowl
  • Add mashed potatoes to bowl
  • Add 8 tbsp cornstarch to bowl
  • Add 2 eggs to bowl
  • Add salt & pepper to bowl
  • Add 1/2 tsp garlic salt to bowl
  • Mix together
  • Grab a handful of the potato mixture
  • Slowly flatten the mixture into a flat pancake
  • Continue this step until all mixture is gone
  • Grab a pan
  • Add 1 tbsp of oil to pan
  • Turn hotplate on high heat
  • Once pan is hot place 1 potato pancake on pan
  • Cook for 5 minutes
  • Flip to the other side and cook for 5 minutes
  • Continue this step until all pancakes are made

Simple Parmesan Pasta – Individual Ramekin

Equipment:

  • Saucepan
  • Ramekin
  • 1/4 teaspoon
  • 1 tablespoon
  • Strainer

Ingredients:

  • 3 oz (6 tablespoons) pasta
  • 1/4 tsp of olive oil
  • 1/2 tablespoon of butter
  • 2 tablespoons of shredded parmesan cheese
  • Salt and pepper to taste
  • Optional: Squeeze of lemon juice and pinch of garlic powder for a Lemony Garlic Pasta

Instructions:

  • Boil the noodles according to package instructions.
  • Drain noodles.
  • Measure out about 5-6 tablespoons (or about 3 oz) of pasta (or however much is a small serving in the ramekin).
  • Toss the pasta with 1/4 teaspoon olive oil in your ramekin until oil is combined.
  • Add the parmesan, butter, salt and pepper and toss to combine again.
  • Stir in the lemon juice and garlic powder (optional for lemony garlic taste).
  • Serve immediately.

Ingredients

  • 1 lbs Bowtie pasta
  • Vegetable Oil
  • 1/2 Cup Parmesan
  • 1 tsp Italian seasoning
  • 1 tsp Garlic powder
  • Marinara sauce

Instructions

  • Grab a hotplate
  • Turn the hotplate on high heat
  • Grab a large pot
  • Fill the pot with water
  • Put a pinch of salt in the water
  • Put the pot on the hotplate
  • Once the water starts to boil add 1 lbs of pasta
  • Cook the pasta for 8 minutes
  • Place a strainer in the sink
  • Strain the pasta
  • Grab a large skillet
  • Pour 1/4 cup oil into the skillet
  • Turn the hotplate on medium heat
  • Once oil is hot, add 1 cup pasta to skillet
  • Cook one side of the pasta until it is golden and crispy, about 5 minutes
  • Flip the pasta and cook for 5 minutes on the other side
  • Once crispy, using a spoon scoop the pasta out
  • Place the pasta on a paper towel to grain
  • Sprinkle parmesan on pasta
  • Sprinkle seasoning on
  • Repeat steps until all pasta to cooked
  • Grab a microwave safe bowl
  • Add marinara sauce to bowl
  • Heat in microwave for 1 minute or until warm
  • Plate the pasta and pour sauce over it to serve

  • 1 Mixing bowl
  • 1 Microwave safe bowl

Ingredients

  • 2 cans original crescent rolls
  • 2 packs cream cheese
  • 1 1/2 cup sugar
  • 1 tsp vanilla
  • 1/2 cup melted butter
  • 1 tbsp cinnamon

Instructions

  • Grab a 13x9 inch baking dish
  • Unroll 1 can of dough
  • Press the dough into the bottom of the dish
  • Grab a mixing bowl
  • Add 2 packs of cream cheese to bowl
  • Add 1 cup sugar to bowl
  • Add 1 tsp vanilla to bowl
  • Grab an electric mixer
  • Put the whisks in the bowl
  • Turn the mixer on medium speed
  • Mix until there are no lumps and ingredients are mixed together
  • Spread the mixture over the dough
  • Unroll the second can of dough
  • Place on top of the mixture
  • Pinch the seams together
  • Grab a microwave safe bowl
  • Add 1/2 cup butter to bowl
  • Place in microwave for 15 seconds or until melted
  • Pour the butter on top of the mixture
  • Sprinkle 1/2 cup sugar on top
  • Sprinkle 1 tbsp cinnamon on top
  • Bake on 350 for 30 minutes
  • Put in fridge for 30 minutes to cool

Bean and Cheese Taquitos

Ingredients

  • 1 Can Re-fried beans
  • 1 Cup Mexican blend cheese
  • 1/2 tsp Taco seasoning
  • 12 Small flour tortillas
  • 2 tbsp Oil

Instructions

  • Grab a mixing bowl
  • Add 1 can re-fried beans to bowl
  • Add 1 cup cheese to bowl
  • Add 1/2 tsp taco seasoning to bowl
  • Mix together
  • Place tortillas on a microwave safe plate
  • Place in the microwave for 15 seconds
  • Grab a cutting board
  • Lay the tortillas flat on the cutting board
  • Using a spoon spread the bean mixture in the center of the tortilla
  • Sprinkle cheese on the mixture
  • Starting from one side carefully roll the tortilla up
  • Continue this step until all tortillas and mixture are gone
  • Grab the hotplate & a pan
  • Turn hotplate on medium heat
  • Add 2 tbsp oil to pan
  • Once the pan is hot place the tortillas in the pan
  • Cook for 2 minutes then flip to the other side
  • Continue this step until all the tortillas are cooked

Chicken Burrito

Ingredients

  • 1 lbs Chicken
  • 1 tsp Chili Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Olive Oil
  • 2 Cups Ready Rice
  • 1 Can Black Beans
  • 1 Cup Cheddar Cheese
  • 1 Pack Tortillas

Instructions

Chicken

  • Place your chicken on a plate
  • Drizzle chicken on both sides with olive oil & spices
  • Grab a pan
  • Turn on hotplate to medium
  • Add 1 tbsp olive oil to pan
  • Once pan is hot add chicken breast to pan
  • Cook on one side for 5 minutes
  • Flip chicken with tongs to the other side, cook for 5 minutes
  • Once chicken is done it should be browned
  • Place chicken on a plate and wait for it to cool
  • Using 2 forks or meat claws shred the chicken

Burrito

  • Cook rice according to the packaging
  • Grab a strainer
  • Place the strainer in the sink
  • Grab the can opener
  • Open the bean can
  • Pour the bean into the strainer
  • rinse the beans
  • rinse and cut your tomatoes if you want to add them
  • Assemble your burrito with your fixings (rice, beans, chicken, tomatoes, cheese, lettuce, hot sauce)
  • Start from one side and roll the burrito up
  • Grab a pan
  • Add 1 tsp butter to pan
  • Turn the hotplate on low
  • Place your burrito on the pan
  • Flip the burrito after 2 minutes or once it becomes brown

Ingredients

  • 8 oz Cream Cheese
  • 2 Cups Mozzarella Cheese
  • 1/2 Cup Cheddar Cheese
  • 1 Cup Pizza Sauce
  • 1/4 Cup Parmesan Cheese
  • Pepperoni Slices
  • Tortilla Chips/Bread
  • 1 tbsp Italian Seasoning

Instructions

  • Grab a mixing bowl
  • Add 8 oz cream cheese to bowl
  • Add 3/4 cup mozzarella cheese to bowl
  • Add 1/2 cup cheddar cheese to bowl
  • Add 1/4 cup parmesan cheese to bowl
  • Add 1 tbsp Italian seasoning to bowl
  • Add a pinch of salt to bowl
  • Mix together
  • Grab a 2 Quartz casserole dish
  • Pour mixture into dish
  • Add 1 cup pizza sauce on to of mixture
  • Sprinkle cheese on top
  • Add pepperoni's on top
  • Turn toaster oven to bake on 350 degrees
  • Put dish in oven
  • Set a timer for 25 minutes
  • Once it is done the cheese should be golden brown
  • Wait to cool then eat

Eclair Cake

  • 9 x13 Baking dish
  • 1 Cup

Ingredients

  • 2 Packages Instant vanilla pudding mix
  • 3 Cups Milk
  • 8 oz Whipped topping
  • 2 sleeves Graham cracker
  • 16 oz Chocolate frosting

Instructions

  • Grab a medium bowl
  • Add 2 packages instant vanilla pudding to bowl
  • Add 3 cups milk to bowl
  • Add 8 oz whipped topping to bowl
  • Mix together
  • Grab a 9x13 inch baking dish
  • Place graham crackers along the bottom of pan
  • Spread half of the pudding mixture on top of the crackers
  • Layer another layer of graham crackers over pudding mixture
  • Spread the other half of pudding mixture on top of the crackers
  • Layer last layer of graham crackers over mixture
  • Put aluminum foil over dish
  • Put in freezer for 15 minutes
  • Microwave the chocolate frosting container for 15 seconds
  • The frosting should be liquid now
  • Grab pan from fridge
  • Pour frosting over the dish
  • Put the aluminum foil back on the dish
  • Put in fridge for 1 hour

Layered Taco Salad

serves 8 to 12

Ingredients:

  • 1 lb. ground beef
  • 1 small can green chilies, undrained
  • 1 head iceberg lettuce chopped, outer leaves removed (all other lettuces will wilt)
  • 1 packet taco seasoning mix (or a mixture of cumin, chili powder and garlic powder)
  • 1 cup ranch sour cream mayonnaise, divided (recipe below)
  • 1 (15 oz.) can of black beans, rinsed and drained very well
  • 1/2 can (about 7 oz.) sweet corn, drained very well
  • 1/2 cup chopped onion + more for top
  • 8 oz. of your favorite tomato salsa
  • 8 oz. shredded sharp cheddar cheese
  • 1 Roma tomato, seeds removed, chopped
  • tortilla chips for topping

Instructions:

  • Cook the ground beef, canned chilies and taco seasoning in a skillet until beef is brown all the way through and the liquid from the chilies has evaporated.
  • Place in refrigerator and allow to chill until completely cold.
  • Then, place in an even layer on the bottom of a 9×13 glass cake pan.
  • Top with a double layer of crisp, iceberg lettuce leaves (half the head, chopped)
  • 1/2 cup of the ranch sour cream mayonnaise smoothed into an even layer, beans, corn, onion, another double layer of lettuce (press down gently after placing the lettuce,) the other 1/2 cup of ranch sour cream mayo, salsa, cheese, tomato and a little more onion.
  • Place cover or foil on cake pan and refrigerate for 12 to 24 hours before slicing into pieces, crunching tortilla chips over the top, and serving. Feel free to top this with avocado chunks, extra tomato chunks, and your favorite hot sauce too!

For the ranch sour cream mayonnaise:

  • 3/4  cup real mayonnaise
  • 1/4 cup full fat sour cream
  • 3 to 6 Tablespoons dry buttermilk ranch dressing mix (homemade or Hidden Valley) add gradually, according to individual taste
  • Mix well. Chill until ready to use.
