Milk and Cookies Fudge

This milk and cookies fudge recipe is a crowd pleasing treat and it is SO easy to make. Grab those Chips Ahoy cookies and let's make some fudge!

Ingredients

  • 3 cups of white chocolate chips
  • 1 - 14 ounce can of sweetened condensed milk
  • 4 tablespoons of butter
  • 1 teaspoon of pure vanilla extract
  • 2 cups of crumbled chocolate chip cookies plus 1 cup for topping
  • 1 cup of mini chocolate chips plus ½ cup for topping

Instructions

  • Line a baking pan with parchment paper. Set aside.
  • Warm and melt the butter, white chocolate chips, and milk in a saucepan over low-medium heat. Stir until it's melted all the way.
  • Add in the vanilla, 2 cups of the crushed chocolate chip cookies, and 1 cup of the mini chocolate chips. Stir well.
  • Pour the mixture into your baking dish and top with the remaining cookie crumbs and mini chocolate chips.
  • Let the fudge harden overnight. Cut into 1 inch pieces and enjoy!

Notes

This fudge makes a great gift. When gifting fudge, remember that it will last 2-3 weeks in the refrigerator but it's best when served room temperature. Try to gift it in an air-tight container.

 

Jay's Single Serve Cookie in a Ramekin

Equipment

  • 1 Medium Bowl
  • 1 ramekin
  • 1 Fork

Ingredients

  • 2 tbsp unsalted butter
  • 1 tbsp granulated sugar
  • 1 tbsp brown sugar
  • 1/4 tsp vanilla extract
  • 1/3 cup all purpose flour
  • 1/8 tsp baking soda
  • 2 tbsp semisweet chocolate chips

Instructions

  • Pre-heat oven to 375 degrees
  • Melt butter in your medium bowl, 15-30 second intervals at a time until melted
  • In the same medium bowl as the melted butter, add in the granulated sugar, brown sugar, vanilla and whisk until dissolved
  • Then whisk in flour, baking soda, salt in same bowl
  • Then stir/fold in chocolate chips
  • Transfer dough to ramekin bake 15-18 minutes let it cool for 10 minutes.
  • ENJOY!!!

Jay’s Easy Pot Pie

Ingredients

  • 1/2 tsp Dried Thyme
  • 1 tsp Dried Parsley
  • 1/2 cup Cooked Chicken (canned works!)
  • 1/2 cup Frozen peas and carrots
  • 2 tsp Flour
  • 3/4 cup Chicken Stock
  • 1 biscuit Refrigerated/can

Instructions

  • Pre-heat oven to 400 degrees 
  • Put all ingredients into ramekin and stir, then put biscuit on top
  • Bake for 20 minutes
  • Let cool for ~5 minutes then Enjoy!

Mummy dogs

Ingredients

  • 1 can crescent rolls
  • 2 1/2 slices American cheese
  • 1 package all-beef hotdogs

Instructions

  • Unroll your dough.
  • Separate in to 4 squares.
  • Press down on dough to seal cracks.
  • Grab your knife.
  • Cut your square in to 10 strips.
  • Grab your cheese.
  • Slice cheese in to four strips.
  • Grab your hot dog and place one strip of cheese on top.
  • Carefully wrap one strip of dough around your hot dog and cheese, leaving small gaps in between.
  • Grab your baking sheet and spray with cooking spray.
  • Place mummy dogs on baking sheet.
  • Bake for 13 minutes at 375 degrees.

Churros

  • 2 Mixing Bowls
  • 2 piping bags
  • 1 Wok

Ingredients

  • 1/4 cup sugar
  • 2 tsp cinnamon
  • 1 cup flour
  • 1 tspn baking powder
  • pinch of salt
  • 1 tbsp veg oil
  • 1 cup boiling water
  • 2 cups veg oil
  • melting chocolate

Instructions

  • Grab a mixing bowl.
  • Combine your cinnamon and sugar and set bowl aside.
  • Grab a second mixing bowl.
  • Mix your flour, baking powder, and salt in to 2nd bowl.
  • Grab a pot.
  • Boil 1 cup of water in your pot.
  • Add your boiling water to your second mixing bowl.
  • Add 1 tablespoon of veg oil in to 2nd bowl.
  • Mix until batter is thick and gummy.
  • Grab your piping bags.
  • Transfer your batter in to your piping bags.
  • Grab your wok.
  • Heat 2 cups of oil over medium heat in your Wok.
  • Once oil is heated, pipe short lengths of dough in to your oil. (using scissors to cut dough).
  • Cook for 2-3 minutes.
  • Grab a plate and put a paper towel on it.
  • Remove churros and place on plate.
  • Roll churros in your sugar mixture.
  • Add any toppings you want and enjoy!

Ingredients

  • 4 cups whole milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon butter
  • 4 eggs
  • 1/2 cup white sugar
  • 3 tablespoons corn starch

Instructions

  • Grab your pan
  • Add 4 cups of milk
  • Add 1 tablespoon vanilla to pan
  • Add 1 teaspoon butter to pan
  • stir ingredients in pan over medium heat until simmering (small bubbles)
  • Turn heat off
  • Place pan on oven mitt to sit
  • grab a bowl.
  • Crack 4 eggs into bowl
  • Add 1/2 cup sugar to bowl
  • Add 3 tablespoon cornstarch to bowl
  • turn your sauce pan to low heat.
  • Place pan back on hotplate
  • slowly pour in your egg mixture to saucepan.
  • whisk constantly until custard thickens.
  • Grab a second bowl
  • pour mixture into second bowl and let cool for 5 minutes.
  • place mixture in fridge for 5 minutes.
  • remove from fridge and enjoy!

Japanese Fried Shrimp

  • 1 Frying pan

Ingredients

  • 1 lbs. Frozen shrimp (tails off)
  • 1/2 tsp Garlic salt
  • 1 Cup Flour
  • 2 Eggs
  • 1 Cup Panko breadcrumbs
  • 1 Quart Oil for frying

Instructions

  • Grab a large bowl
  • Place shrimp in bowl
  • Add salt, pepper, and garlic salt to bowl
  • Grab 3 small bowls
  • Add 1 cup flour & paprika to first bowl
  • Crack 2 eggs in second bowl
  • Add 1 cup panko breadcrumbs to third bowl
  • Take 1 shrimp at a time and dip it into all three bowls
  • Continue this step until all shrimp is covered
  • Grab a hotplate & skillet
  • Add oil to skillet
  • Turn hotplate on high heat
  • Grab a white plate & paper towel
  • Place plate to side
  • Once pan is hot add shrimp to pan
  • Cook shrimp for 5 minutes or until golden brown
  • Once shrimp is cooked place it on the paper towel to cool

Ingredients

  • 2 Cups Flour
  • 1 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1 Cup Water
  • 1/2 Cup Butter
  • 3 Eggs
  • Cannoli Oil
  • Honey

Instructions

  • Grab a mixing bowl
  • Add 2 cups flour to bowl
  • Add 1 tsp baking powder to bowl
  • Add 1/2 tsp salt to bowl
  • Mix together
  • Grab a pot & hotplate
  • Fill the pot halfway with water
  • Turn hotplate on high heat
  • Wait until pot boils (bubbles)
  • Turn heat to low
  • Add 1/2 cup butter to pot
  • Stir until butter is melted
  • Slowly stir in flour mixture in pot
  • Add 3 eggs to pot, one at a time
  • Once mixture turns into a dough consistency turn off heat
  • Grab a pan
  • Grab a plate & place paper towel on it
  • Turn hotplate on high heat
  • Add cannoli oil to pan
  • Wait for oil to heat up
  • Using a tablespoon spoon dough out
  • Add dough to pan
  • Cook dough about 1 minute on each side
  • Once dough is cooked place it on paper towel
  • Continue this step until all dough is cooked
  • Drizzle honey & powdered sugar on top

Chicken Fried Rice

Ingredients

  • 5 Cups White Rice
  • 2 lbs Chicken
  • 1 tsp Sesame Oil
  • 1 tsp Olive Oil
  • 1 can Peas
  • 1 can Carrots
  • 1 can Corn
  • 1 Onion
  • 1 Green Onion
  • 3 Eggs
  • 3 tbsp Minced Garlic
  • 4 tbsp Soy Sauce

Instructions

Cutting

  • Grab a cutting board & knife
  • Cut onion into small slices
  • Cut green onion into small slices
  • Cut the chicken into bite sized pieces

Chicken

  • Grab a hotplate & pan
  • Turn hotplate on medium heat
  • Once pan is warm add 1 tbsp olive oil to pan
  • Add 1 tsp sesame oil to pan
  • Add chicken to pan
  • Cook chicken for 5 minutes then flip
  • Cook for another 5 minutes or until chicken is white
  • Once chicken is cooked turn off hotplate
  • Place chicken on separate plate & wash dishes

Rice

  • Grab a hotplate & pot
  • Fill pot halfway with water
  • Cook rice according to packaging

Vegetables

  • Grab a can opener
  • Open all vegetable cans
  • Grab a hotplate & pan
  • Turn hotplate on medium heat
  • Add 1 tsp sesame oil to pan
  • Add 1 tsp olive oil to pan, wait for pan to heat up
  • Add all vegetables to pan
  • Cook vegetables for 5 minutes
  • Add 3 tbsp minced garlic to pan
  • Push the vegetables to the sides of the pan
  • Crack 3 eggs into center of pan
  • Using a spatula scramble the eggs with the vegetables

Mixture

  • Once vegetables are done add the chicken to the pan
  • Turn hotplate to low heat
  • Add 4 tbsp soy sauce to pan
  • Mix ingredients together & serve

  • 2/3 Cup Coconut Milk
  • 1 Tbsp Coconut oil
  • 1 Tbsp Tomato puree
  • 4 Oz Chicken
  • Green Onion
  • 1 Onion
  • 2/3 Cup White Rice
  • Spinach

Instructions

  • Grab a cutting board & knife
  • Cut the chicken into bite sized pieces
  • Grab another cutting board & knife
  • Cut all vegetables you desire (onion, spinach, or green onion)
  • Grab a pot
  • Fill the pot halfway with water
  • Place pot on hotplate
  • Turn hotplate on high heat
  • Wait until water boils (bubbles)
  • Then cook the white rice according to the package
  • Grab a pan & the hotplate
  • Turn hotplate on medium heat
  • Wait for hotplate to warm
  • Add chicken to pan & cook until chicken is done or white
  • Add 2/3 cup coconut milk to pan
  • Add 1 tbsp. tomato puree to pan
  • Wait for mixture to boil (until you see bubbles)
  • Once mixture is boiling add vegetables to pan
  • Cover the pan with a lid
  • Cook for 10 minutes, stir occasionally
  • Add the green onion to the pan
  • Add the rice to the pan
  • Cook until the liquid has been absorbed by the rice
