Vanilla Mug Cake Recipe

This super easy vanilla mug cake recipe is perfect for those days when you’re craving a delicious fluffy homemade cake.
Cook time: 2 minutes
Yields: 1 mug cake

Ingredients

  • 1/4 cup white flour
  • 2 tbsp sugar
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/4 cup water
  • 1 1/2 tbsp oil, butter or mashed banana
  • 3/4 tsp vanilla extract

Instructions

  • Stir all ingredients in a greased mug or bowl.
  • Either bake in the oven or microwave until fluffy and cake-like. It takes around 1 1/2 to 2 minutes in the microwave, depending on wattage.
  • Or preheat the oven to 350 F and bake 14 minutes.

Ingredients

  • 1/2 cup Frozen chicken
  • 2 bags Rice
  • 1/4 cup Cheese

Instructions

Rice

  • Grab pot
  • Grab 2 bags of rice
  • Pour 4 cups of water into pot
  • Submerge bag of rice into pot
  • Turn hot plate on to high
  • Wait for water to bubble and boil
  • Cook rice uncovered for 8-10 minutes
  • Remove bag from water using a fork
  • Put a strainer into the sink
  • Put the bag of rice into the strainer to drain water
  • Cut bag of rice
  • Dump into a bowl
  • Add cheese to rice

Frozen Chicken

  • Grab a microwave safe plate
  • Put 1/2 cup of chicken onto plate
  • Microwave high for 1- 1/2 minutes
  • Combine chicken & rice together in a bowl and enjoy!

Ingredients

  • 2 tbsp olive oil extra virgin
  • 1/2 medium yellow onion
  • 1 tbsp minced garlic
  • 28 oz crushed tomatoes
  • 1/2 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper freshly ground

Instructions

  • Grab a cutting board and knife
  • Chop half an onion into small pieces
  • Place medium sauce pan over medium heat
  • Add 2 tablespoons of olive oil to medium saucepan
  • Once oil is hot, add 1/2 an onion of chopped onions into pan
  • Stir often until onions are soft and golden
  • Add 1 tablespoon of minced garlic to medium sauce pan and stir for 1 minute
  • Using a can opener, open can of tomatoes
  • Stir in 28oz of crushed tomatoes
  • Add 1/2 teaspoon of oregano
  • Add 1/2 teaspoon of salt
  • Add 1/4 teaspoon pepper
  • Let sauce sit for 10 minutes
  • Turn hot plate down to setting 2 and let it simmer partially covered for 15 minutes
  • Turn hot plate off

Italian Sub Sandwich Salad

During intermediate cooking skills we learned how to make a salad. For salads you need a couple different things to make it a meal, and not just a bunch of greens. This salad is inspired by a submarine sandwich. Enjoy all the flavors and textures of this great salad!

Ingredients

For the Salad:

  • 3 hearts of romaine
  • 12 slices salami
  • 6 slices provolone
  • 1 bag of pepperoni
  • 2 cucumbers
  • 2 red peppers
  • 1 1/2 cup of banana peppers
  • 2 white onions
  • 1 1/2 tablespoons black pepper
  • 1 1/2 tablespoons dried basil

For the Dressing:

  • 3/4 cup of olive oil
  • 1/2 cup of red wine vinegar
  • 3/4 teaspoon garlic powder
  • 1 1/2 tablespoon Italian seasoning
  • 1 1/2 tablespoon honey
  • 1 1/2 teaspoon salt

Directions

For the Dressing:

  1. Gather all the ingredients for the dressing.
  2. Measure out all the ingredients for the dressing
  3. Whisk together ingredients for dressing.
  4. Cover and set aside.

For the Salad:

  1. Gather all the ingredients.
  2. Chop up romaine lettuce.
  3. Slice the cucumbers, onion, and peppers into thin strips.
  4. Chop the cheese, salami, and pepperoni.
  5. Get a large bowl and put the lettuce in it.
  6. Put the vegetables in the bowl.
  7. Put the meats and cheese in a bowl.
  8. Add the black pepper and basil.
  9. Add the banana peppers.
  10. Add the dressing.
  11. Toss all the ingredients together
  12. Divide into servings and enjoy.

Mozzarella Sticks

Did you know you can create some of your favorite fried or fast food options at home? In intermediate cooking we learned how to bread and then fry food. It is a three step process that can add flavor, texture, and a crunch to your meals.

Ingredients

  • 2 large eggs, beaten
  • 1/4 cup of water
  • 1 ½ cups Italian seasoned bread crumbs
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of garlic powder
  • 2/3 cup all purpose flour
  • 1/3 cup cornstarch
  • 1 package of mozzarella sticks (16 count)

Directions

  1. Gather all the ingredients.
  2. Create garlic salt by combining 1/4 teaspoon of salt and 1/4 teaspoon of garlic powder.
  3. Whisk the water and the eggs together in a small bowl.
  4. Mix bread crumbs and garlic salt in a medium bowl.
  5. Blend flour and cornstarch in a third, medium bowl.
  6. Turn on air fryer and spray the rack with cooking oil.
  7. After this, slice the mozzarella sticks in half.
  8. Coat the mozzarella stick in the flour mixture, shake off any excess flour.
  9. Next, dip into the egg mixture.
  10. Press into breadcrumb mixture and coat.
  11. Place in air fryer, not overcrowding them. Let them cook for 6-8 minutes.
  12. Serve with marinara sauce and enjoy!

Pickle Juice and Honey Marinade

Nicknamed “The Picky Hicky” this marinade uses a blend of sweet and savory flavors. A marinade is a sauce that soaks meats and vegetables to create more flavor and better texture. Learning about marinades is great considering summer is around the corner…and what’s better than grilling out?

Ingredients

  • 1/2 cup of pickle juice
  • 1/4 cup of honey
  • 1/4 cup of olive oil
  • 1/4 cup fresh cilantro, chopped
  • 1 small onion, finely chopped

Directions

  1. In a bowl, add the pickle juice, honey, olive oil, chopped cilantro, and finely chopped onion.
  2. Mix well to ensure that the ingredients are thoroughly combined.
  3. Place your desired meat, such as chicken, pork, or beef, in a resealable plastic bag or a shallow dish.
  4. Pour the marinade over the meat.
  5. If using a plastic bag, seal tight and remove excess air. If using a dish, cover with plastic wrap.
  6. Place the marinated meat in the fridge, letting it marinate for at least an hour.
  7. Next, take out of fridge and let it sit on counter for 15 minutes before cooking
  8. Cook the meat according to preference. This would be a great time to reference a previous recipe on IGNITE cooks: “Three Ways to Cook Chicken.”
  9. After cooking, let sit for a few minutes. This lets the juices distribute evenly.
  10. Garnish with extra cilantro if desired and enjoy!

Chicken Mac and Cheese

Ingredients

Macaroni

  • 1/4 Cup Unsalted Butter
  • 1/2 Sweet Onion
  • 3 tbsp Flour
  • 2 Cups 2 % Milk
  • 2 Cups Cheddar Cheese
  • 2 Cups Shredded Chicken
  • 1/4 tsp Black Pepper
  • 1/4 tsp Salt
  • 8 oz Macaroni
  • 1 tbsp Minced Garlic

Breadcrumbs

  • 2 tbsp Unsalted Butter
  • 3/4 cup Breadcrumbs

Instructions

Macaroni

  • Grab a large pot
  • Fill the pot up halfway
  • Put pot on the hotplate
  • Turn hotplate on high (level 5)
  • Once the pot of water is boiling (big bubbles), add macaroni
  • Cook for 15 minutes
  • Once macaroni is done, strain pasta water
  • Turn the hotplate off

Chicken

  • Grab a cutting board & knife
  • Put the rotisserie chicken on the cutting board
  • Start to cut off slices of chicken
  • Cut the chicken into bite sized pieces

Sauce

  • Grab a knife & cutting board
  • Chop onion into small pieces
  • Turn on stove top to medium (level 3)
  • Add 1/4 cup butter to pot
  • Add onions to pot
  • Cook for 5 minutes
  • Add 1 tbsp garlic to pot
  • Add 3 tbsp flour to pot
  • Cook for 1 minute
  • While continuing to stir, add 2 cups milk to pot
  • Add 2 cups cheddar cheese to pot
  • Stir until cheese is melted
  • Add chicken to pot
  • Add pasta to pot
  • Season with salt & pepper to pot
  • Turn off hotplate

Bread Crumbs

  • Grab a pan
  • Turn hotplate on medium (level 3)
  • Add 2 tbsp butter to pan
  • Add 3/4 cup bread crumbs to pan
  • Stir mixture for 3 minutes
  • Turn off hotplate
  • Add breadcrumbs to pot of macaroni & serve!

Chopping up Fresh Vegetables

Today we will be practicing multiple ways of prepping vegetables. Some will be brought to the farm we are visiting this weekend and others will be enjoyed with some dip. The methods below are just a few of the many ways you can prepare vegetables for summer dishes or snacks!

Ingredients

  • Any fresh vegetable of your choice. Examples can be:
  • Carrots
  • Cucumbers
  • Peppers
  • Celery
  • Broccoli
  • Ranch packet
  • 16oz Sour cream

Directions

  1. Begin by making the dip. Mix the Ranch packet with 16oz of sour cream.
  2. Cover and set inside the fridge for it to set for one hour.
  3. Next, practice some ways to prep vegetables:
  • Chop
  • Slice
  • Julienne
  • Dice
  • Peel
  • Batonnet
Remember all of these techniques require patience and practice. Don’t give up! Also perfection is not the goal, just working on some skills and enjoying the process.

Pulled Pork Bao Buns

We learned so many new cooking terms this week in intermediate cooking. It was hard to choose a recipe since we had so many possibilities! After voting, we decided to try an Asian/American recipe where we will practice steaming.

Ingredients

  • 2 Containers of biscuit dough
  • 1 pound Pulled pork
  • Barbeque Sauce, to preference
  • Coleslaw, to preference

Directions

Making the Buns:

  1. To begin halve each biscuit dough.
  2. Place on parchment paper and press your palm down to flatten biscuits into oval shape.
  3. Fold the biscuit dough in half.
  4. Keep loosely covered with clean kitchen towel or plastic wrap.
  5. Put as many as you can in steamer, but make sure that they are an inch apart.
  6. Cover and steam for 10-12 minutes, or until they are puffy or white.
  7.  After the buns are steamed it is time to assemble the bao buns.

Assembling the Bao Buns:

  1. Open up the Bao Buns.
  2. Place the pulled pork on the inside of the opened bao buns.
  3. Add barbeque sauce and some coleslaw to finish.

Servings: 16 small bao buns

Egg Bacon & Cheese Breakfast Sandwich

Egg Bacon and Cheese Breakfast Sandwich

  • 1 Microwave safe mug
  • 1 Microwave Safe Plate
  • 1 TBSP

Ingredients

  • 1 Egg
  • 1 tbsp Milk
  • 2 Strips Bacon
  • 1 Bagel
  • 1 Slice Cheddar Cheese

Instructions

Egg

  • Grab a microwave safe mug
  • Crack 1 egg in mug
  • Beat egg with a fork
  • Add 1 tbsp milk to mug
  • Stir mug
  • Put mug in microwave for 90 seconds
  • Add salt and pepper to taste

Bacon

  • Grab a microwave safe plate
  • Place 2 slices on bacon on plate
  • Put in microwave for 1 minute
  • Take out and make sure bacon is brown, if not put back in microwave for 30 seconds
  • Pat bacon with paper towel when done

Bagel

  • Slice bagel in half
  • Put bagel in the toaster oven
  • Once bagel is brown add cheese to one side

Combining all ingredients

  • Put bagel on plate
  • Add scramble eggs to one side of bagel
  • Add bacon on top
  • Close sandwich and enjoy!
