Baked Pears

Ingredients

Directions

1. Prep: Preheat oven to 400F. Line a 9″x13″ baking dish with parchment paper if you prefer easier cleanup, or spray it with nonstick spray.

2. Peel & Core: If using a firm pear variety like Bosc, peel them. Remove the core with a melon baller or a small spoon. Leave the stems on for better visual appeal. If you’re using softer pears like Anjou, keep the skin on to help them keep the shape as they bake.

3. Add toppings: Set the pears cut side up inside the pan. Drizzle with lemon juice to prevent browning. Sprinkle with brown sugar mixed with nutmeg and cinnamon (if using). Arrange the cubed pieces of butter on top of the pears. Drizzle with vanilla extract.

4. Bake for 30 minutes cut side up. Turn the pears cut side down.  Bake for another 20-50 minutes or until the pears are soft.

5. Serve warm with vanilla ice cream, yogurt, sour cream, or a sprinkle of roasted walnuts or sliced almonds.

IGNITE Homemade Ice Cream in a Bag

Ingredients

  • 1 c.  half-and-half
  • 2 tbsp. granulated sugar
  • 1/2 tsp. pure vanilla extract
  • 3 c. ice
  • 1/3 c. kosher salt
  • 1 quart sized bag
  • 1 gallon sized bag

Directions:

  1. In a small resealable plastic bag, combine half-and-half, sugar, and vanilla. Push out excess air and seal.
  2. Into a large resealable plastic bag, combine ice and salt. Place small bag inside the bigger bag and shake vigorously, 7 to 10 minutes, until ice cream has hardened.
  3. Remove from bag and enjoy!

Honey Lime Rainbow Fruit Salad

 

Ingredients

Salad

  • 2 containers of strawberries, quartered
  • 2 Navel oranges peeled and halved
  • 1 Pineapple, cubed
  • 4 kiwis, scooped and quartered
  • 1 container of blueberries
  • 1 lb of red grapes

Honey Lime Dressing

  • 1/4 cup honey
  • 2 tsp lime zest (zest of 2 medium limes)
  • 1 1/2 Tbsp fresh lime juice

 

Directions

  1. Wash and prep all fruit. Add to a large bowl
  2. Mix honey, lime jucie and lime zest together.
  3. Stir and enjoy!

Individual Banana Puddings

Ingredients

  • 1 (5 ounce) package instant vanilla pudding mix
  • 2 cups cold milk
  • 1 (14 ounce) can sweetened condensed milk
  • 1 tablespoon vanilla extract
  • 1 (12 ounce) container frozen whipped topping, thawed
  • 1 (16 ounce) package vanilla wafers
  • 14 bananas, sliced

Directions

  1. Prepare bananas by slicing them.
  2. In a large mixing bowl, beat pudding mix and milk 2 minutes.
  3. Blend in condensed milk until smooth.
  4. Stir in vanilla and fold in whipped topping.
  5. Layer wafers, bananas and pudding mixture in individual ramekins. Enjoy!

IGNITE Individual Trail Mix

 

Ingredients

  •  1/4 c (or 4 tbsp) popcorn/goldfish
  • 3 tbsp nuts (cashews, almonds, peanuts, etc)
  • 1 tbsp seeds (sunflower, pumpkin, etc)
  • 1 tbsp dried fruits (cranberries, berries, pineapple, etc)
  • 1 tbsp chocolate chips or m&ms

Directions

  1. Add each ingredient to a small plastic  bag.
  2. Mix and enjoy!

Guacamole

Ingredients

  • Six small avocados/ 4 medium avocados
  • 1 bunch cilantro
  • 2 tablespoon pickled jalapeños
  • 1 teaspoon salt
  • 2 cloves garlic
  • 2 limes, juiced

Directions

  1. Mash avocado into a bowl.
  2. Chop cilantro, garlic, and jalapeños. Add them to the bowl.
  3. Add lime juice and salt.
  4. Enjoy!

Mexican Street Corn

Ingredients

  • 2 10- ounce bag steam fresh whole kernel corn*
  • 3 tablespoon real butter softened
  • 3 tablespoon mayonnaise
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • juice 2 limes
  • 1 teaspoon garlic powder
  • 6 green onions sliced
  • 1 cup crumbled feta or cotija cheese
  • 4 tablespoon cilantro chopped fresh

Directions

1) Heat corn in microwave according to package instructions.
2) Meanwhile, mix butter and mayonnaise until smooth.
3) Add paprika, salt, pepper, zest and juice of 1 lime, garlic powder to the butter/mayo mixture and mix until well combined.
4) Place corn in a serving dish and drop spoonfuls of butter mixture on top of corn.
5) Sprinkle cheese, cilantro, and green onions over butter. Serve hot.

Vanilla Blueberry Smoothie

Ingredients

  • 1 cup loosely packed spinach
  • 1/2 cup unsweetened milk or milk of choice
  • 1/4 cup old fashioned rolled oats
  • 1 cup frozen blueberries
  • 1/4 cup plain non-fat yogurt
  • 1 tablespoon pure maple syrup
  • 1 teaspoon vanilla extract

Directions:

  1. Place all ingredients in a blender in the order listed: spinach, milk, oats, blueberries, yogurt, maple syrup, and vanilla.
  2. Blend and serve!

Tropical Green Smoothie

Ingredients

  • 1 cup fresh spinach
  • 1 cup milk
  • 1 cup frozen mango
  • 1 fresh banana

Directions:

  1. Blend 1 cup of spinach (or another leafy greens of your choice) in a blender.
  2. Next, add 1 cup of liquid and blend well (until all leafy chunks are gone).
  3. Toss in fruit, such as frozen mango and bananas in the blender.
  4. Next, blend again until smooth and creamy.
  5. Serve smoothie immediately for maximum nourishment.
  6. Looking to turn your smoothie into a meal replacement? Adding clean protein + healthy fat does the trick.

Clean Proteins + Fat examples:

  • 1 scoop of proteins powder + avocado
  • 2 tablespoons of nut butter

IGNITE’s Mini Parfaits

Ingredients:

  • 1-2 tablespoons granola
  • 1-2 tablespoons yogurt
  • 1-2 tablespoons fresh berries or diced fresh fruit

Instructions

  1. For each parfait, layer granola and yogurt in mini dessert cups or glasses. Top with fresh fruit.
  2. For larger parfaits, you may need to repeat the layers. Chill until serving. Best served within 1-2 hours.
