Mini Na’an Pizza

Ingredients

  • 1 mini na’an
  • 1/3 c shredded mozzarella
  • 1-2 tbsp of red sauce
  • 3-6 chopped mushroom pieces
  • 3-6 chopped bell pepper pieces
  • 3-6 pepperoni
  • for the top: spicy red pepper, basil, oregano

Directions

  1. Preheat oven to 400 degrees.
  2. Chop veggies
  3. Scoop red sauces on na’an and spread to edges.
  4. Sprinkle cheese and add toppings.
  5. Bake 8-9 minutes until cheese melts and is bubbly. Crust should be golden brown.
  6. Enjoy!

No Bake Cheese Cake for One

No Bake Cheesecake for One

Ingredients

  • 1 sheet graham cracker
  • 8 oz Nonfat Greek Vanilla Yogurt
  • 1 tbsp sugar free Jello cheesecake pudding mix
  • 3 strawberries, diced

Instructions

  • For the graham cracker crust: in a small plastic bag, crush the graham cracker into a powder.
  • For the cheesecake layer: add the cheesecake pudding mix to the yogurt and stir until smooth. The mixture should be thick.
  • Topping: Dice strawberries
  • Layer: In a 8oz jar, spread the graham cracker crumbs in the bottom. Add the cheesecake layer and push the filing down into the graham cracker crumbs. Finally, top with diced strawberries.
  • Serve: Enjoy immediately or until you are ready to eat. Keep refrigerated.

Potato Soup

 

Potato Soup

Ingredients

  • 3 lbs russet potatoes
  • 2 cups 2% milk
  • 1 cup shredded cheese
  • 12 green onions (chopped)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Peel potatoes and cut into 1” pieces.  
  • Fill a large pot of water with just enough water to cover the potatoes and bring it to a boil. 
  • Reduce the heat to a simmer and continue to cook the potatoes for about 15-20 minutes until soft. When poked with a fork, the potato should mostly fall apart. While you are waiting, chop the green onions. 
  • Remove from heat and drain most of the water, from the pot, leaving just a half inch of water at the bottom of the pot. (This doesn’t have to be exact so don’t stress!) Get out the milk, garlic powder, salt, and pepper. 
  • Add the milk, garlic powder, salt, and pepper, then gently mash the potatoes with the back of a fork until the potatoes start to break down. I like my soup chunky, but if you like it smoother, you could use a potato masher or a blender. 
  • Continue to cook on low heat for 5 minutes. 
  • Divide into bowls and top each bowl with a little cheese, green onions, and additional salt and pepper to taste 

Stovetop Mac and Cheese

Ingredients

  • 1.5 c elbow macaroni
  • 2 tablespoon butter
  • 2 tablespoon all-purpose flour
  • 2 cup low fat milk 2%
  • 2 cup sharp cheddar cheese shredded
  • salt and pepper, to taste (optional)

Makes two bowls.

  1. Bring a large pot of water to a boil over high heat and cook macaroni according to instructions on the box for al a dente. Drain well.​
  2. In the same pot, melt the butter on medium heat and stir in the flour. Mix with a wire whisk and slowly add milk. Cook on low heat for a few minutes until thickened.​
  3. Add shredded cheese and mix well until the sauce is smooth.​
  4. Stir in the pasta and mix until hot and well combined.​
  5. Season with salt and pepper to taste if necessary.

Pico de Gallo (Salsa)

Ingredients

  • 2-3 large tomatoes
  • 1/4 c red onion
  • 1 green bell pepper
  • 2 green onions
  • 1/3 c cilantro
  • 2 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp salt

Notes

Step 1: Dice tomato, red onion, and bell pepper. Put together in a medium bowl.
Step 2: Chop cilantro and green onion. Add to bowl.
Step 3: Add garlic powder, salt and lime juice and stir well.
Step 4: Enjoy with tortilla chips or on top of nachos!

IGNITE Breadsticks!

Ingredients

  • 3/4 cup warm water
  • 1/2 tbsp instant yeast
  • 1 tbsp sugar
  • 1/2 tbsp salt
  • 1 1/2-2 cups flour
  • 1 pinch Italian seasoning
  • 1 pinch parmesan
  • 1 pinch salt
  • Cooking spray

Instructions

  • In a large bowl by hand, mix together the measured warm water, yeast, sugar, salt and one cup of the flour.
  • Continue adding the flour until the dough just clears the sides of the bowl; knead for about three minutes. It should be soft and slightly sticky without leaving a lot of residue on your fingers.
  • Let the dough rest in the bowl for 10 minutes.
  • Preheat the oven to 400 degrees F. Grease baking sheet.
  • Pat the dough into a long rectangle, 3-inches by 8-inches. Using pizza cutter, slice the dough every 1-inch into strips. Twist each strip and place about 1/2-inch apart on baking sheet. Sprinkle lightly with Italian herbs, garlic powder, salt and Parmesan cheese.
  • Let rise for 20 minutes.
  • Bake for 15 minutes until golden.

Ingredients

  • 2 tbsp brown sugar
  • 1 tbsp milk
  • 1/4 tsp vanilla extract
  • 1 tbsp oil (coconut oil or vegetable oil)
  • 3 tbsp all-purpose flour
  • 1/4 tsp baking powder
  • 1 pinch baking soda
  • 1 pinch salt
  • 2 tbsp chocolate chips

Instructions

  • In a microwave-safe mug (or ramekin), add brown sugar, milk, vanilla extract, and oil.
  • Mix well until everything is well-combined.
  • Add flour, baking powder, baking soda, and salt to mug mixture.
  • Mix well until the dough comes together.
  • Add 1 tablespoon chocolate chips and mix till combined.
  • Top off the dough with 1 tablespoon chocolate chips.
  • Microwave for 1 minute.
  • Chocolate chip mug cookie is ready - Let cool slightly and enjoy warm!

  • 2 cups all purpose flour
  • 1 tbsp baking powder

  • 1/4 cup oil
  • 1 cup blueberries
  • 1 pack muffin tin liners

Instructions

  • Preheat oven to 400 degrees F
  • Stir together the flour, baking powder, salt and sugar in a large bowl
  • Make a well in the center
  • In a small bowl beat egg with a fork
  • Stir in milk and oil and pour all at once into the well in the flour mixture
  • Mix quickly and lightly with a fork until moistened, but do not beat
  • Add 1 cup fresh blueberries and stir
  • The batter will be lumpy
  • Pour the batter into paper lined muffin pan cups
  • Bake for 25 minutes, or until golden

  • 1/4 tsp salt
  • 1/4 cup walnuts or chocolate chips

Instructions

  • Preheat the oven to 350 degrees F
  • Grease an 8x8-inch pan
  • Melt butter in a microwave safe dish in the microwave
  • Combine the melted butter, sugar, cocoa powder, vanilla, eggs, flour, baking powder, and salt
  • Stir together until just combined and no dry ingredients are left
  • Add nuts or chocolate chips if desired and gently stir to mix in
  • Spread the batter into the prepared pan
  • Bake in preheated oven for 20 to 30 minutes (until desired doneness)

Instructions

  • Preheat oven to 350 degrees F
  • Lightly grease an 8-inch square baking pan
  • Sift together the flour, salt, and baking powder
  • Cream together (Beat) butter and white sugar until fluffy and light in color
  • Add eggs one at a time, beating well after each addition
  • Stir in vanilla
  • Add the sifted dry ingredients to the creamed mixture
  • Add the milk to the ingredients
  • Stir until just blended
  • Pour batter into prepared pan
  • Bake at 350 degrees for 25-35 minutes (until cake springs back when lightly touched)
  • Let cool in pan for 10 minutes before removing from pan and placing on a wire rack to cool completely
