Sheet Pan Italian Sausage Heros

Ingredients

  • 1 package Italian sausage Turkey, chicken, or pork, Mild, sweet, or hot (your choice!)
  • 1 Green bell pepper Cored, 3/4" sliced
  • 1 Red bell pepper Cored, 3/4" sliced
  • 1/2 onion 3/4" sliced (red or yellow onion, your choice)
  • salt and pepper
  • 1 tbsp hoagie rolls

For the Honey Mustard Sauce

  • 1/3 cup Mayo
  • 1 tbsp mustard
  • 1 tbsp Honey
  • 1 tsp soy sauce

Instructions

  • Heat oven to 425°F.
  • Core and slice pepper and onion into medium slices ( about 3/4")
  • Place the bell peppers and onion on a rimmed baking sheet.
  • Drizzle with olive oil and sprinkle with salt and pepper, toss to coat.
  • put the sausages in between the veggies and roast for 30 minutes.
  • set a timer for 30 minutes
  • while that is cooking, start making the honey mustard sauce
  • After the 30 minutes is up, remove the sausage and veggies from the oven Carefully using oven mits. and toss with the sauce or drizzle on top once in the hoagie roll.
  • toss with the sauce or drizzle on top once in the hoagie roll.
  • Serve sausage and veggies on toasted hoagie rolls smothered in the sauce.
  • Turn off the oven and enjoy!

Honey Mustard Sauce

  • In a small bowl mix the mayonnaise, whole grain mustard, honey and soy sauce.

Clean Up

  • put away all ingredients
  • any left over foods wrap tightly in tupperware and refrigerate
  • wash dishes

Balsamic-Goat Cheese Grilled Plums

Ingredients

  • 1 cup balsamic vinegar
  • 4 medium firm plums halved and pitted
  • 2 tsp grated lemon zest
  • 1/2 cup crumbled goat cheese

Instructions

Prep Work

  • measure and prepare your ingredients

For the Glaze

  • in a small sauce pan, combine vinegar and lemon zest
  • turn heat on high, bring to a boil
  • once at a boil, lower heat to medium for 10-12 minutes
  • turn the heat off when mixture is thickened

For the Plums

  • heat skillet at medium heat
  • spray with non-stick cooking spray
  • place plums face down for 2-3 minutes
  • flip plums over for another 2-3 minutes
  • remove from heat, place plums on plate.
  • Drizzle with glaze
  • top with crumbled cheese

Clean Up

  • turn stove top off
  • put ingredients away
  • cover and refrigerate any leftovers

Egg muffins are one of the best healthy breakfasts for meal prepping because you easily make a big batch of them at once and they will keep in your fridge for up to a week.

Ingredients

  • cooking spray
  • 3 eggs
  • 1 TBS milk
  • 2 TBS cheese cheddar or any kind
  • pinch salt and pepper

  • Bacon 3 slices
  • Peppers any kind
  • Spinach
  • jalapenos
  • onion
  • any other meat or vegetable

Instructions

  • Preheat oven to 350º
  • Grease a muffin tin with oil or cooking spray
  • In a large nonstick skillet over medium heat (5/6), cook to soften the optional ingredients. Pour a teaspoon of oil into the pan and cook the veggies to soften
  • When veggies are soft (usually about 5-6 minutes) set in a bowl aside and turn the stove off
  • In a small bowl, whisk eggs, milk, and seasonings using a whisk or fork
  • Fold in cooked vegetables/meats
  • Pour egg and vegetable mixture into greased muffin tins. This should fill up about 6 regular sized muffins
  • Bake until cooked through and golden, 30 to 35 minutes. 
  • Let cool, then store in the fridge in an airtight container until ready to eat.

Clean Up

  • Turn oven and stove top off
  • Put away any unused ingredients
  • refrigerate any leftovers

Ingredients

Hard Boiled Eggs

  • 3 Eggs Older eggs (not expired) are easier to peel than fresh eggs.
  • dash salt

Instructions

  • Cover the eggs in a saucepan with water. Add more water so that the eggs are covered by at least an inch or two of water.
  • Heat the pot on high heat (8-10) and bring the water to a full rolling boil
  • Turn off the heat, keep the pan on the hot burner, cover, and let sit for 10-12 minutes
  • Depending on how cooked you like your hard boiled eggs, the eggs should be done perfectly in 10-12 minutes
  • Carefully drain out hot water, and replace with cold water. You want to cool the eggs quickly to stop them from cooking inside. You may want to use an ice bath
  • Let eggs chill in ice water for about 10-15 minutes.

Peel your eggs

  • Crackle the egg all over by tapping it on your counter.
  • Roll the egg gently between your hands to loosen the shell
  • Peel the egg starting at the large end. If you hold the egg under cold running water or dip it in a bowl of water this will help remove the shell.

Egg Storage

  • The best way to store hard boiled eggs is in a covered container in the refrigerator. Eggs can release odors in the fridge which is why it helps to keep them covered.
  • They should be eaten within 5 days.

Ingredients

  • 2 Potatoes Medium Sized, any kind
  • 1/2 cup onion red or yellow
  • 1/4 cup celery
  • 1/4 cup Mayonnaise low fat
  • 2 tbs pickle relish
  • 2 tbs mustard yellow or any kind

Instructions

  • Scrub the potatoes, and peel them. Leave skin on for more nutrients, if you prefer.
  • Cut the potatoes into 1-inch cubes.
  • Put the potatoes into a saucepan. Cover with water. Sprinkle with Salt
  • Bring the potatoes to a boil on medium heat.
  • Let the potatoes simmer for 15 minutes until they’re soft.
  •  Drain the hot water, and let the potatoes cool. You can put potatoes in the fridge to make the process go quicker
  • While the potatoes are cooling, peel and chop some onions until you have 1/2 cup of chopped onions.
  • Chop the celery until you have 1/4 cup of chopped celery.
  • Put the chopped onion and celery in a medium mixing bowl.
  • Add the mayonnaise and pickle relish. Stir together.
  • Add the cooled potatoes. Stir again.

Cleaning

  • Cover the bowl, put in fridge
  • put away any unused produce in the fridge
  • Wash pot and dishes

Ingredients

  • 1 Large Burrito or Wrap
  • 2-4 slices Turkey You can purchase 1/4 lb from the deli counter at the grocery store or purchase a container or Hillshire farm from the processed food isle

    You may also substitute any other deli meat for the turkey, such as ham or roast beef.

  • 2-4 slices Cheese Colby jack, cheddar, or American or any other slice cheese you prefer!
  • 1 handful spinach may substitute with any lettuce

Optional Ingredients

  • 1 tbs mayonnaise
  • 1 tbs Mustard
  • 3 slices onion
  • 1 tbs dressing
  • 1 tomato sliced

Instructions

  • lay out tortilla or wrap on a plate
  • spread any mayo or mustard onto the middle of the wrap
  • Add protein slices to middle of the wrap
  • Add cheese slices on top of the protein
  • Add Spinach on top of the cheese
  • Add any onion or other optional ingredients to the wrap
  • Add any optional dressing
  • Roll the Tortilla or wrap up into a tight log shape
  • Cut the tortilla into 1 inch chunks
  • Enjoy! !

Clean up

  • Please put any left overs in a container and refrigerate
  • Put any unused ingredients back in the refrigerator
  • Wash any dishes used with soap and water or place in Dishwasher
  • Spray and wipe counter tops clean

20 Minute Chicken Tostadas with shredded chicken, black beans, avocado, crumbled cheese and homemade baked tortilla shells. Tasty, healthy and quick weeknight dinner.

Ingredients

  • Tostada Shells You can use store-bought tostada shells but be aware they contain artificial colours and hydrogenated oils. I highly recommend to make your own – all you need is corn tortillas! Super easy recipe included below.
  • Shredded Chicken You can use a rotisserie chicken. or chicken breast. See recipe below
  • 14 oz black beans low sodium
  • Guacamole advocado, tomato, red onion, and seasonings
  • Cotija Cheese can substitute cheddar or feta cheese

Instructions

Shredded Chicken

  • Place boneless, skinless chicken breasts (or thighs) in the bottom of a large pot
  • Season with salt and pepper and taco seasoning
  • Cover the chicken with 1 inch of water
  • Place the pot on the stove and bring the water to a gentle boil. (usually medium high or 6/7 heat settings)
  • Check for doneness.- The chicken is done when the center reaches 165 degrees F (use an instant-read meat thermometer for guaranteed safety and accuracy) THe chicken will be white all the way through. There will not be any pink.
  • Once chicken cools after about 15 minutes, take two forks and shred by pulling apart gently
  • Set aside or refrigerate until you are ready to use

Tostada Shells

  • Preheat oven to 400 degrees F
  • Line large baking sheet with parchment paper or silicone baking mat and arrange tortillas in a single layer.
  • Spray each tortilla with cooking spray and sprinkle with salt, on both sides.
  • For 6 minutes per each side, flipping once.
  • turn oven off and set tortilla aside

Guacamole

  • You may use store bough guacamole, or you may make fresh
  • For Fresh: Chop tomato, avocado, red onion, cilantro
  • mix together in a small bowl
  • add pinch of salt and lime juice

Final Step of Tostadas

  • take 1 crispy tortilla and top with guacamole
  • add black beans
  • add Shredded chicken
  • top with cheese

Ingredients

  • 16 Ounces refrigerated biscuit dough
  • 4 Ounces  Mozzarella Cheese
  • 4 tbsp Unsalted Butter
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 2 tbsp Parsley

Instructions

  • Preheat oven to 400F
  • Grab a baking sheet and line it with aluminum foil and spray the sheet with cooking spray
  • Separate biscuits into 4 equal pieces
  • Place cheese into the center of each piece
  • Wrap the dough around the cheese
  • Place on baking sheet with the seam side down
  • Bake for 10 minutes at 400F
  • Watch them closely in the last minutes of baking to make sure they do not burn 
  • While the rolls are baking grab a bowl
  • In the bowl add the butter and microwave for 60 seconds or until melted
  • Using a spoon combine the Italian seasoning, garlic powder, and salt with the butter and stir together
  • Once rolls are done cooking apply the butter mixture using a brush to each roll

Ingredients

  • 1 can refrigerated biscuit dough
  • 2 tbsp baking soda
  • 1 1/2 cup warm water
  • 1/2 cup melted butter
  • 1 cup granulated sugar
  • 2 tsp pumpkin spice/cinnamon

Instructions

  • Preheat oven to 400 degrees
  • Line large baking sheet with parchment paper/foil
  • Using cutting board and knife cut each biscuit into sixths
  • Roll biscuit pieces into ball
  • Place on baking sheet
  • Put to the side
  • Add 1 1/2 cup of warm water to bowl
  • Add 2 tbsp of baking soda to bowl
  • Stir until baking soda is dissolved
  • Brush baking soda solution onto each piece of dough
  • Let dough balls sit until dried (2 mins)
  • Brush with about 1 tbsp melted butter
  • Bake until golden 10-12 mins
  • Stir 1 cup of sugar and 2 tsp of pumpkin spice in small bowl
  • When pretzels are cool toss in melted butter
  • Then toss in pumpkin spice mixture

Ingredients

  • 1/2 cup Dry pasta
  • 1/2 cup Water
  • 1/4 teaspoon Milk
  • 1/4 cup Shredded Cheese
  • Frozen Grilled Chicken

Instructions

  • Grab a microwave safe bowl
  • Combine the pasta, water, and salt in the bowl
  • Place bowl in the microwave.
  • Microwave for 2 minutes and stir when done. If you notice the water is forming over the side of the bowl then stir earlier if needed.
  • Continue microwaving in 2 minute intervals until pasta is done. Remember to stir between intervals. This should take about 6 minutes.
  • If the microwave absorbs all of the water before the pasta is done add 2 tablespoons of water to the bowl.
  • Once pasta is done use oven mitts to remove bowl from the microwave.
  • Stir milk and cheese into pasta.
  • Microwave the bowl in 30 second intervals for about 1 to 1 and a 1/2 minutes.

Microwaving Frozen Grilled Chicken

  • Place frozen grilled chicken on a plate.
  • Place the plate in the mircowave.
  • Microwave on high for about 1 and 1/2 minutes.
  • Cut the chicken into smaller pieces and place in bowl with mac & cheese.
