Cucumber Tomato Bean Salad

Cucumber Tomato Bean Salad

Ingredients

  • 1 English cucumber (sliced and halved)
  • 1 large tomato (chopped)
  • 1/4 small red onion (sliced)
  • 1/2 cup beans (white beans or garbonzo)
  • 1/4 cup Italian Dressing (or dressing of choice)

Instructions

  • Wash all produce and dry
  • Peel cucumber
  • Cut the cucumber into slices and then halves
  • Place cut cucumbers in a large bowl
  • Chop tomato into large bite-size pieces
  • Place tomato chunks into the bowl too
  • Cut onion in half and peel one half
  • Cut half of the peeled onion into thin slices
  • Add onion to bowl
  • Open can of beans and drain water
  • Add 1/2 cup of beans to bowl
  • Add 1/4 cup dressing to bowl of cut veggies (or more if desired)
  • Stir all ingredients together to mix well and coat with dressing
  • Serve at room temperature or chilled

Veggies and Dip

Ingredients

  • 2 large carrots
  • 2 celery stalks
  • 1 bell pepper (any color)
  • 1 16oz sour cream
  • 1 packet Ranch Dip Mix (1 oz packet)

Instructions

  • Open the sour cream container and add the packet of Ranch mix
  • Stir the sour cream and Ranch till fully mixed
  • Cover and set Ranch Dip aside for later (or return to fridge)
  • Wash carrots, celery, and pepper
  • Peel the carrots
  • Cut carrots into desired size and set aside
  • Cut celery into desired size and set aside
  • Cut pepper into desired size and set aside
  • Place veggies on a plate and serve with Ranch dip.

Pasta and Sauce with Frozen Veggies

Pasta, Sauce and Frozen Veggies

Ingredients

  • 1 16oz box pasta (whole wheat or white) any style
  • 1 24oz jar pasta sauce
  • 1 bag frozen vegetables (your choice of veggies)
  • 1 jar parmesan cheese (optional)

Instructions

  • Cook pasta using the directions on the box or the steps below
  • Fill a large pot with water (no more than 2/3 full)
  • Cover the pot and place on stove on high heat
  • Bring to a vigorous boil
  • While the water is coming to a boil, steam the frozen veggies in the microwave using the following steps:
  • Open frozen veggie bag and dump into a microwave safe bowl
  • Add a couple tablespoons of water to the bowl, cover with Syran wrap and cook for the recommended microwave time on the package (or begin with 4 minutes, adding another minute as needed)
  • Once veggies are done, remove Sryan wrap and set aside
  • Once the pasta water has come to a vigorous boil, remove cover and add the box of pasta to the boiling water and stir
  • Bring back to a boil and then lower heat to medium-high (to keep at a gentle boil)
  • Time pasta for 7 minutes (or according to time on package)
  • After timer goes off, check for doneness by carefully removing a piece of pasta with a slotted spoon, let cool and taste a piece
  • If pasta is not done, cook for another minute and test again. If done, follow next steps
  • Turn off the heat, place a strainer in a clean sink and pour pasta and water into strainer (away from you)
  • Once all the water has been drained, pour the pasta back into the pot
  • Add the steamed veggies and jar of sauce to the pasta and place over low-medium heat until just warm
  • Once done, turn off stove and serve warm with any preferred toppings

Quick and Easy Canned Taco Soup

Ingredients

  • 1 can beans – black, pinto, or kidney (15 oz) You can add an extra can of beans if you prefer
  • 1 can diced tomatoes (15 oz)
  • 1 can sweet corn (15 oz)
  • 1 can tomato sauce (8 oz)
  • 1 can chicken (12.5 oz)
  • 1 packet taco seasoning (2 tbsp)

Instructions

  • Using a can opener, open all of the cans for the recipe
  • Add all of the ingredients (cans and taco seasoning) to a soup pot
  • Stir the ingredients till they are well mixed
  • Cook the ingredients over medium-high heat on the stove
  • Once it begins to boil (bubble vigorously) reduce heat to simmer (low to low-medium heat)
  • Continue simmering and stirring occasionally for 15 minutes
  • Turn off heat, allow to cool slightly and serve with any additional toppings desired

Scrambled Eggs and Cheese

Scrambled Eggs and Cheese

Ingredients

  • 3 eggs
  • 8 oz block of Cheddar Cheese (we will be grating the cheese to get 1/3 cup)
  • 1 tbs butter
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

  • Using a cheese grater, grate part of the block of cheese into a bowl bowl and set aside (1/3 cup)
  • In another medium bowl, crack and add the eggs
  • Add 1 tsp of water to the eggs
  • Whisk the eggs and water vigorously until frothy and smooth
  • In a large pan/skillet, over low-medium heat, add the butter and allow to melt (use a rubber spatula to move butter around and coat whole pan).
  • Pour the eggs into the pan and let sit for a few seconds
  • When the eggs begin to thicken, use the whisk to gently beat the eggs
  • Allow eggs to sit for just a few seconds between beating them again
  • Eggs will begin to thicken more and curd throughout the cooking time – Repeat this process of whisking then resting the eggs for a few seconds until eggs are half cooked
  •  Sprinkle the eggs with a pinch of salt and pepper and continue to whisk and rest until almost almost fully cooked.
  • Add 1/3 cup of shredded cheese
  • Continuously whisk the eggs and cheese until fully cooked and cheese is melted.
  • Remove from heat and serve warm

Notes

While scrambling, if a thin film of egg begins to set on the edges of the pan while you are whisking, the heat is too high and you are whisking a bit too fast.
Be gentle and take your time.
If this happens, very quickly incorporate those dry edges back into the eggs.

Mashed Potatoes

Ingredients

  • 1 lbs potatoes (russets or Yukon golds) ~ 3 potatoes
  • 3 tbsp butter
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1/2 tsp salt
  • 1/8 tsp pepper

Instructions

  • Wash and peel the potatoes.
  • Put the potatoes in a large pot.
  • Add enough water to cover the potatoes by about an inch. (Do not fill the pot more than 2/3 full or it may boil over more easily)
  • Place pot (with potatoes and water) on the stove and bring to high heat.
  • Allow to come to a boil for about 15 minutes.
  • Check the potatoes occasionally with a fork. (If potatoes are soft and can be easily punctured with a fork, they are done).
  • Using a strainer, drain the water from the potatoes.
  • Return potatoes to the pot.
  • Use a potato masher to mash potatoes until smooth.
  • Add butter to the mashed potatoes and stir until melted.
  • Add milk to potatoes.
  • Add sour cream to potatoes.
  • Add salt and pepper to potatoes.
  • Stir and mash again until you reach desired consistency.
  • Add more salt and pepper as desired.

Ingredients

  • 1 cup Bisquick Mix
  • 1/3 cup milk
  • 1/4 cup Cheddar Cheese (SHREDDED)
  • 1/8 tsp garlic powder
  • 1 tbsp butter (optional) to spread on biscuits if desired

Instructions

  • Preheat oven to 450 degrees.
  • In a medium bowl add the Bisquick mix.
  • Add the milk.
  • Add the and cheese.
  • Add garlic
  • Stir all the ingredients in the medium bowl together until soft dough forms.
  • On an ungreased cookie sheet – drop dough by spoonfuls to make about 4 biscuits.
  • Bake 8 to 10 minutes or until golden brown.
  • Remove from oven when finished and place pan on a cooling rack or hot pads.
  • Allow to cool and then enjoy biscuits plain or with butter!

Bisquick Pancakes

Ingredients

  • 1 cup Bisquick mix
  • 1/2 cup milk
  • 1 eggs
  • 1 can spray oil (a small amount of oil works fine too)

Instructions

  • In a medium bowl add Bisquick Mix.
  • Add milk to the bowl.
  • Crack eggs and add to the bowl of ingredients.
  • Stir all ingredients together until well mixed.
  • Put a skillet (pan) on the stove and warm up to low/medium heat.
  • Spray pan with spray oil to prevent the pancakes sticking.
  • Add about 1/4 cup of the pancake mixture to the skillet.
  • Cook until edges are dry and then flip the pancake.
  • Cook till golden and serve.
  • Continue cooking pancakes a couple at a time until all mix is gone.

Ingredients

  • 1 cup flour
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 2-3 tbsp milk
  • 1/4 cup sprinkles

Instructions

  • In a medium bowl add the butter.
  • Then add the sugar.
  • Then add the brown sugar.
  • Then add the salt
  • Then add the vanilla.
  • Now add the milk.
  • Mix ingredients in medium bowl together with a fork until smooth and fluffy.
  • Add the flour to the bowl of wet ingredients.
  • Stir together until just mixed and no dry flour is showing.
  • Add the sprinkles and stir.
  • Scoop dough into 1" balls using a spoon or scoop to help shape.
  • Enjoy at room temperature or cold after placing in the refrigerator.

Notes

**If you’re nervous about consuming raw flour, you can microwave the flour in a microwave safe bowl for 1 1/2 minutes prior to making the recipe.
**Not for baking – there are no leavening ingredients (ex: egg, baking soda, baking powder)

Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/4 cup butter, softened (left at room temperature for an hour before using)
  • 1/4 cup oil
  • 1 egg
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla
  • 1 1/2 cup flour
  • 1/4 cup sprinkles (or mini chocolate chips)
  • 1/2 cup holiday M&Ms

Instructions

  • View notes section below and choose ONE substitution to try in the recipe.
  • Preheat oven to 350.
  • In a large bowl, cream the butter, oil and sugars together. (either with fork or electric mixer)
  • Add eggs and beat until fluffy. (either with fork or electric mixer)
  • Add baking soda, salt, powder, vanilla and flour.
  • Mix well. (either with fork, rubber spatula, or electric mixer)
  • Fold in sprinkles with a rubber spatula
  • Use cookie scoop (or roll into about 1 1/2 inch balls) and put on greased cookie tray or parchment paper.
  • Top with 4-5 M&Ms.
  • Bake at 350 for 7-8 minutes.
  • Let cool completely before removing from tray.

Notes

Choose one substitution from the list below to use in the recipe:
  • Use 1/4 cup applesauce (instead of 1/4 cup oil)
  • Use 1/3 cup brown sugar and 1/3 cup white sugar (instead of 1/2 cup of the sugars)
