Easy Pecan Pie Bars

Easy Pecan Pie Bars

Ingredients

  • 3 each eggs
  • 2 1/4 cup cups brown sugar, packed
  • 2 cups cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 cups cups pecans, chopped*
  • 1 1/2 tsp teaspoons vanilla extract

Instructions

  • Preheat oven to 300 degree F.
  • In a mixing bowl, beat the 3 eggs.
  • Add the 2 1/4 cups packed, brown sugar.
  • Stir in the 2 cups of flour, 1 tbsp baking powder, and 1/2 tsp salt until smooth.
  • Add the pecans and vanilla (dough will be stiff).
  • Grease a 9×13 inch baking pan.
  • Spread dough in the greased baking pan.
  • Bake at 300 degrees Fahrenheit for 30 to 35 minutes (or until a toothpick inserted near the center comes out clean)
  • Cool before cutting.

Notes

*If you bought whole nuts, put 2 cups in a large Ziplock bag, remove all the air, and crush by rolling with a rolling pin

Roasted Almonds

Ingredients

  • 2 cups Raw Almonds
  • 1 tbsp Olive Oil
  • 1 tsp Smoked Paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt

Instructions

  • Preheat oven to 350ºF.
  • In a large bowl, combine the almonds and olive oil and stir with a spoon to coat.
  • Add the smoked paprika, garlic powder and salt to almonds and oil toss to coat evenly.
  • Spread the nuts on a rimmed baking sheet, making sure they are spread evenly.
  • Bake for 5 minutes, remove from oven to stir.
  • Return the nuts to the oven and bake for an additional 5 minutes.
  • Keep a close eye on these, they can burn quickly!
  • Let cool then enjoy!

Notes

Make a Honey-Cinnamon sweetened version by using:
  • 2 cups whole raw almonds
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon honey
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

  • 1 Apple peeled & sliced
  • 1/2 tbsp Melted butter
  • 1/4 tsp Cinnamon

Crisp Topping

  • 2 tbsp Soft butter
  • 1 tbsp Flour
  • 3 tbsp Old fashioned oats
  • 1/4 tsp Cinnamon

Instructions

  • Wash apple
  • Peel apple & slice it into thin slices
  • Grab a small bowl
  • Add 1/2 tsp melted butter to bowl
  • Add 1/4 tsp cinnamon to bowl
  • Add 1 tsp brown sugar to bowl
  • Add 1 tsp flour to bowl
  • Mix all ingredients together
  • Grab another small bowl
  • Add 1 tbsp flour to bowl
  • Add 3 tbsp old fashioned oats to bowl
  • Add 1 tbsp brown sugar to bowl
  • Add 1/4 tsp cinnamon to bowl
  • Add 2 tbsp soft butter to bowl and use a fork to work in butter
  • Add 1 spoon full of apple filling to bottom of mug
  • Add 1 spoon full of crisp filling on top
  • Continue this pattern until all fillings are in the mug
  • Place in microwave for 3 minutes
  • Serve with ice cream or whipped cream!

Hot Cocoa & Cookie Dunker

Ingredients

  • 1/2 cup Sugar
  • 1/4 cup Baking cocoa
  • 4 cups Milk
  • 3/4 tsp Vanilla

Dunker Ingredients

  • 1/2 cup Butter
  • 2/3 cup Brown sugar
  • 2 tsp Baking powder
  • 1 Egg
  • 1 cup Flour
  • 3/4 cup Chocolate Chips
  • 1 tsp Vanilla
  • 1/2 tsp Salt

Instructions

  • Grab a saucepan and place on stove
  • Add 1/2 cup sugar to pan
  • Add 1/4 cup baking cocoa to pan
  • Add a pinch of salt to pan
  • Add 1/3 cup water to pan
  • Turn stove on medium heat (level 5) and wait until it boils (bubbles)
  • Stir in 4 cups milk to pan
  • Stir pan until the mixture is warm
  • Take off stove and add 3/4 teaspoon to pan
  • Wisk mixture until frothy or until thick
  • Add marshmallows/ cinnamon/ whipped cream as desired

Dunker Cookie

  • Preheat oven to 375 degrees
  • Grab a baking sheet and put parchment paper on sheet
  • Add 1/2 cup butter to a microwave safe bowl and heat for 30 seconds
  • Add 2/3 cup brown sugar to bowl and stir together
  • Add 2 teaspoon baking powder to bowl
  • Add 1/2 teaspoon salt to bowl and stir
  • Add 1 egg to bowl
  • Add 1 teaspoon vanilla to bowl and mix together
  • Add 1 cup flour to bowl and mix
  • Add 3/4 cup chocolate chips to bowl and fold batter over
  • Transfer your batter to baking sheet and spread it on pan
  • Cook for 15-18 minutes or until brown
  • Take out of oven and allow to cool
  • Once cool take a pizza cutter and slice cookie into thin slices

Ingredients

  • 3/4 cup chunky salsa
  • 2 cups shredded cheese (of your choice)
  • 4 8-inch, whole grain, flour tortillas
  • 1/2 teaspoon olive oil
  • 3/4 cup Assorted toppings (optional) ex: black beans, chopped onions, diced peppers, spinach, etc.)

Instructions

  • Using a small-hole strainer, drain liquid from salsa; discard liquid.
  • Transfer the salsa chunk mixture to a medium bowl.
  • Prep any additional toppings as needed (ex: dice onions, dice peppers, wash spinach, etc).
  • Add cheese and any additional toppings to the salsa mixture and mix together until combined.
  • Divide cheese mixture evenly over half of each tortilla (about 1/2 cup each).
  • Fold tortillas in half.
  • Heat large griddle or skillet over medium-high heat.
  • Drizzle oil in the skillet.
  • Place filled tortillas on the skillet (as space allows).
  • Cook, carefully flipping once, until tortillas are golden brown and crisp and cheese filling melts, about 5 minutes.
  • Cut quesadillas into wedges and enjoy!

Ingredients

  • 1 box (7-1/4oz) macaroni & cheese
  • 6 cups Water

Instructions

  • Bring water to boil in medium saucepan.
  • While waiting for water to boil, choose 1 type vegetable/bean that will be added to the macaroni and prepare 1/2 cup of vegetable accordingly (ex: cut, blend, mash, steam, etc).
  • Add Macaroni and cook 7 to 8 min (or until tender) stirring occasionally.
  • Drain the water from the macaroni (Do not rinse).
  • Return macaroni to pan.
  • Add 1/4 cup butter to macaroni.
  • Add 1/4 cup milk to macaroni
  • Add cheese packet to macaroni.
  • Stir ingredients together.
  • Add the 1/2 cup of the vegetable or bean of your choice to the macaroni.
  • Serve!

Ingredients

  • 1/2 cup blueberries, strawberries, peaches, etc. Your choice!
  • 2 tbsp sugar
  • 1/4 cup Original Bisquick mix
  • 1 tbsp Milk any milk should be fine, may cook a bit different. If you do not desire milk, water may be substitute but may not be as creamy.

These ingredients are optional and only if desired!

  • 1/8 tsp Ground Cinnamon
  • 1 tbsp nuts (pecans, almonds, walnuts, etc.), chopped, if desired
  • 1 tbsp old-fashioned oats

Instructions

  • Chop fruit if necessary (if other than any sort of berry)
  • In microwavable mug, mix fruit and 1 tablespoon of the sugar.
  • In small bowl, mix Bisquick™ mix, remaining 1 tablespoon sugar, and any of the "if desired" ingredients. Add milk, and stir until a thick dough forms.
  • Drop dough in clumps over fruit in mug.
  • Microwave uncovered on High 90 seconds to 2 minutes or until fruit bubbles to top of mug. Cobbler will be very hot; wait 5 minutes before serving.
  • Top with whipped cream or ice cream, if desired.
