NO-BAKE OATMEAL COOKIES

A no-bake treat that's good all day.

Equipment

  • Measuring spoons
  • Medium-sized microwave-safe bowl
  • Measuring cup
  • Spoon, for stirring
  • Tablespoon
  • Baking Sheet
  • Spatula or drinking glass

Ingredients

  • 3 tablespoons peanut or almond butter
  • 3 tablespoons honey
  • 3/4 cups “quick” or “1-minute” oats the smallest kind
  • 1/4 cup shredded dried coconut sweetened or unsweetened
  • Pinch of salt if your nut butter is unsalted

Instructions

  • Put the nut butter and honey in the bowl and put it in the microwave. Cook until the nut butter is melted and the honey is liquid-y, 30 seconds to 1 minute, depending on your microwave.
  • Carefully remove the bowl from the microwave.
  • Add the oats and coconut and stir well. Add the salt, if using.
  • Use a tablespoon to form the mixture into balls, and put them on the baking sheet. Use the spatula or the bottom of the glass to press down gently until they form “cookies.” (If some of the dough sticks to the spatula or glass while you’re doing this, just peel it off and use your fingers to reform the cookie.)
  • Cover with plastic wrap and refrigerate at least 1 hour.
  • Enjoy or store in an airtight container up to 2 days.

No-Bake Cranberry Granola Cookies

  • 11 oz Nature Valley oats ‘n dark chocolate protein granola
  • 1 cup chopped sweetened dried cranberries
  • 1 cup pistachio nuts
  • 3/4 cup packed brown sugar
  • 1/2 cup corn syrup
  • 1/4 cup creamy peanut butter
  • 1 teaspoon vanilla

Instructions

  • In a bag, crush Nature Valley bars into small pieces using a rolling pin
  • Line cookie sheet with waxed paper.
  • In large bowl, mix granola, cranberries and pistachio nuts.
  • In 2-quart saucepan, mix brown sugar, corn syrup and peanut butter.
  • Heat to boiling over medium-high heat (2 or 3 setting on Hot Plate) stirring constantly.
  • Boil and stir 1 minute.
  • Remove from heat
  • Stir in vanilla.
  • Pour syrup over granola mixture, stirring until evenly coated.
  • Using a 1/4 measuring cup, scoop mixture onto waxed paper.
  • Cool completely, about 30 minutes.

Ingredients

  • 2/3 cup frozen blueberries
  • 2 tablespoons fresh lemon juice
  • 2/3 cup frozen blackberries
  • 1 tablespoon butter
  • 1/2 cup water
  • 2 cups plain 2% reduced-fat Greek yogurt
  • 1/4 cup sugar

Instructions

  • Combine berries, lemon juice, water, and sugar in a small saucepan and stir.
  • Bring mixture to a boil.
  • Reduce heat to medium-low; gently boil 10 minutes or until sauce thickens.
  • Stir in butter.
  • Spoon 1/2 cup yogurt into each of 4 bowls; top each serving with about 1/4 cup sauce. Serve immediately.

Ingredients

  • 2 strips of chicken
  • 3 pieces of onions
  • 3 pieces of red pepper
  • 3 pieces of yellow pepper
  • 3 pieces of carrot
  • 5 pieces of green beans
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper

Instructions

  • Preheat oven to 375 degrees
  • Cover a baking sheet with foil
  • Spray the baking sheet with cooking spray
  • On a cutting board, cut each vegetable into two chunks
  • Place vegetables in a bowl
  • On the same cutting board, cut each chicken strip into four chunks
  • Put the chick chunks in another bowl
  • Sprinkle 1/2 teaspoon of salt on chicken
  • Sprinkle 1/2 teaspoon of pepper on chicken
  • Use gloves to mix chicken with salt and pepper
  • Grab two wooden skewers
  • Thread chicken and vegetables through skewer
  • You can choose however you would like to order your chicken and veggies
  • Place your kabobs on baking sheet
  • Place baking sheet in oven and cook for 25 mins.

Ingredients

  • 1/4 cup fresh or frozen raspberries strawberries, or Blueberries
  • 1/4 cup plain yogurt
  • 1/4 cup orange juice or water
  • 1 large banana sliced

Instructions

  • Put all the ingredients in the blender
  • Put the top on tightly
  • Turn on the blender to medium speed and blend until the mixture is smooth, 30-60 seconds
  • Pour Smoothie into glass and serve immediately or cover and refrigerate up to 4 hours.

Ingredients

  • 1 Banana peeled
  • Miniature marshmallows
  • Semi-sweet chocolate chips
  • Cinnamon Toast Crunch cereal slightly crushed

Instructions

  • Preheat toaster oven to 400F.
  • Slice banana lengthwise and slightly open. Place on a rectangle of aluminum foil.
  • Insert marshmallows and chocolate chips into the sliced banana.
  • Wrap up banana. Bake at 400F for 5-6 minutes.
  • Top with cereal. After melt has slightly cooled eat with a spoon.

Ingredients

  • 1 Chicken breast
  • 1 dash Salt, Pepper, and other seasonings
  • 2 cups Lettuce

Instructions

  • Cut chicken breast into strips about 1 inch thick
  • Pour about 1/2 tablespoon of oil on chicken.
  • Season with salt, pepper, and other seasonings (optional)
  • Place pan on stove and set the burner to medium. Put chicken in pack and cook until it is no longer pink in the midder, about 3-4 minutes
  • When chicken is done, place on clean plate
  • Grab a handful of lettuce and place into a bowl
  • Cut desired veggies and add to bowl
  • Top with chicken
  • Choose dressing, add to salad
